Notes: This is my end of Winter cleanup. I am using up a bunch of bits and bobs of leftover grains I had from other brews. This also marks the end of my lagering season as my cellar warms with the spring. To do this, I made a blend of two yeasts I harvested from previous brews. I also wanted to try making a beer that drinks like a pilsner, that is dark. |

Fly sparge until 7.0 in boil kettle.
Boil, add warrior, 20 minute hop stand with 6 oz hops and 3oz Chai
Lactose @ 10 minutes
Rack to fermenter.
Pitch Yeast
When krausen begins to fall add dry hops.
Dry Hop 3 days
Transfer to Secondary for 1 week.
Split Vanilla beans and add everything to Secondary with 2oz Chai Tea.
Cold Crash 2 days.
Bottle or rack to keg. |

Notes: Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 170F. 90 minute boil. 0 Minute hopstand hops get added at flameout and stand for 45 minutes. 0 min Aroma hops get added at 160F during chilling. Pitch and ferment 60-62F. Primary for a total of 14 days so that everything clears up nicely, cold crash for 2 days at or below 40F, then rack to secondary and bring back to ferm temps. Add first dry hop, 2 days later add second dry hop and filter and bottle at the end of day 4. Bottle and condition for 21 days at 62F. |
