Notes: This was a club group brew that turned out amazing. Some how we over shot our SG by 20 points. I updated the recipe to reflect that. Here is a link to the 5 gallon batch. Although not an exact clone, it is pretty close. http://www.brewersfriend.com/homebrew/recipe/view/139622/colon-emergency-5-gallon

2/1/2020
Brew time finished after pitching at 8 pm.
80F at 1.072 = 1.074 g/ml
Did not use mash tun, on stove top.
Accessory grains: 5.8 gallons
9 hours later bubbling.
Air-lock stopped day 4. Opened took gravity on the 6th found it to be 1.014 g/ml. Took sample and tasted, definitely ginger very sweet still. Added 2 tablespoons of yeast energizer. Placed in slightly warmer place.
Bubbles started again 20 minutes later probably from the agitation
2/13/2020
Checked gravity, clarity and color, and a taste test.
SG 1.012, cloudy straw, Cream-ale ish plus egg from gasses from fermentation over all ginger.
Transferred into secondary.
2/15/2020
Took gravity no change 1.012 g/ml
Ginger flavor slightly more warm and with a slight ginger ale burn.
Added 2.75 oz of shaved ginger in a sanitized grain bag and canning jar for weight to keep the ginger in full contact with the beer.
2/21/20
Checked Gravity found it had dropped to 1.010 and cleared substantially. Slightly disappointed with the ginger taste and mouth feel. No where near the ginger that I had expected considering adding more ginger later today. ABV now hovering 8.8%. I am expecting no color change, but maybe another point lower in a week or two.
3/1/2020
Checked gravity found it has stayed at 1.010 and has stayed clear. The ginger taste is mild but good rounded flavor. Calculated abv 8.84% Bottling and subsequent carbonation fermentation will more than likely yield a FG at time of pour of 1.008 g/ml or 9%. I will leave beer in secondary until bottling later this week.
3/8/202
Bottled w 5.4 oz Light Malt Extract
Taste more ginger than I expected, decent finish, not sweet, light mouth feel. Did something new to estimate increase in abv in the bottle after bottle conditioning. I took pre sugar and post sugar readings.
Pre Sugar = 1.010
Post Sugar = 1.102
This would equal 0.26 % ABV increase if all the sugar that is convertible converts to alcohol 9.08% in the bottle.

Notes: Sparged into 3 gallon pot and added back to 10 gallon pot prior to boiling. transferring added a lot of oxygen to the boil and resulted in wort being prone to boil over from the start.
Wyeast package partially swollen before rupturing inner yeast packet.
The conical fermenter main valve clogged immediately due to large amount of hops used in recipe...unclogged with sterilized racking cane.
Brew day 11/25/17 finish 4pm. Started bubbling by 8pm...vigorous fermentation through 11/27/17. |

Notes: Plan is to make to beers on with OG around 1070 9l and one with OG aroung 1100 4l, the 4 liters beer will be added mushrooms for interesting tase notes. The recepie is as such made for a 18L 1070 where as 8L will be boiled down to 6L and 2 L boiled down to 0.5L and added at high cresant with 50g sugar and 50g Dextrose to dry out the beer and increase the gravity and caramel like flavors from the boiled down wort.
Crystal 60L is seen as 150EBC (will be a tad lighter) |

Notes: 2.5 gallons of bottled spring water into sanitized fermenter. added 10lbs Kirkland Clover Honey and topped off water to ~ 3.75 gallons or Original gravity of 1.100. rehydrated 2 packets of lalvin ec-1118 with 95* bottled water. Pitched yeast along with 1 tsp of DAP and 1/2 tsp of fermaid K. temp initially 78* but cooled indoors to 70* and began fermentation within 8 hours. fermenter transferred to garage where temp dropped to 65*.
fermaid K additions
at pitch: 1/2tsp
24hrs: 1/2tsp
48hrs:1/2tsp
@ ~1.055:1/2tsp
Degassed twice a day for the first 3 days
stalled fermentation after 9 days at 1.060 for a few days. ferm temp dropped to 60* and pH was 2.9. added 2.5 grams of potassium carbonate, 1/2 tsp DAP, raised temp to 66* and re pitched. New pH 3.5 and fermentation has restarted. stppped fermentation with campden tabs and potassium sorabate at 1.010.
12/9/2018- back sweetened with 12 oz by weight of clover honey which made the final gravity 1.012. this gravity reading leads me to believe thatmy last gravtiy reading was wrong or fermentation is still going slowly somehow. will check gravity again in a month or so to determine is it is still fermenting. strong cardamom flavor and aroma needs age and more sweetnes |
