Notes: 90 min mash with 21L remineralised RO water @ pH5.3
Add 15g magnum before sparging.
Sparge with 16L remineralised RO water, or to 30L pre boil volume
Use counter-flow chiller to drop the wort to 80C then add whirlpool additions and whirlpool for 30min and transfer to keg, aiming for 40C pitching temp.
Use Sigmund Gjernes Voss Farmhouse blend yeast, ferment at 40C for 2 days then at 22C 4 days.
Dry hop after 24 and 48 hours, keg after 6 days fermentation. |

38l water treated with 1 x campden tablet and 10ml lactic acid and 9ml AMS.
Carry out alkalinity and calcium test for further info
Alkalinity 6.4 = 86ppm so a bit high
Calcium test 7.50 = 125ppm so pretty good
Dough in at 40, 20 min rest at 43 degrees
Add 1.5l water mash at 67 for 50
Add 1.5l water mash at 72 for 5 mins
Mash at 77 for 5 mins
No protofloc
At start of boil appeared to be approx 33litres of wort took gravity reading and it was 1.033!!
Decided to switch to a 2 hour boil to increase the gravity so reduced wort to approx 25 litres
cooled to 21 degrees and whirlpooled, managed to squeeze 20l of wort into the fermenter
OG now 1.052
Pitched yeast, (nutrient sachet hadn't dispersed into yeast properly as it was folded over)
Placed into fermentation chamber @ 18.5 degrees
Ferment at 18.5 for 3 days then 20 degrees for 2 days, 21 for 2 days
After 8 days checked gravity and it was 1.011
Racked into keg with 150g brewing sugar ready to be bottled.
ABV 5.4%
After 36 hours in keg transferred to 27 x bottles
Placed in conditioning chamber @ 18 degrees
Would probably go for 35 litres water only next time as ended up with too much wort after mash.

Notes: Before starting sanitize all equipment that will come in contact with the mead. If you are concerned about wild yeast in your honey, pasteurize or use campden tablets.

1. Warm up the honey to make it viscous (80F) for easier pouring. Do not heat over 160F.
2. Blend honey and cider with cold water; Top off carboy to 5.25 gallons. For smaller batches, use a 75% water and 25% honey mixture.
3. Add yeast nutrient and stir to oxygenate.
4. Add yeast and ferment at 68F. Use WLP775 English Cider (use a starter) yeast or Lalvin 71B yeast.
5. For the first three days, degas by shaking or stirring with sanitized spoon and add yeast nutrient every 24 hours.
6. Once fermentation is complete (~14-21 days) rack from primary fermenter to secondary and let rest for 2 months to a year.
Add vanilla bean and cinnamon to carboy for optional flavor a few days before bottling.
Bottle when certain fermentation has ceased and let age minimum of two months. |

Notes: Mash grains at 154°F (68°C) for 60 minutes. Sparge into two kettles, one at a time, then adjust wort gravity to 1.050 and 1.035, respectively. Commence boil and add half the boiling hops to each kettle at the specified time, then half the flavor hops at the specified time. Chill to 64°F (18°C) and pitch yeast. Ferment out, then carefully blend the ales 50/50, and condition. The blended gravity should be right between the two finish gravities.

Notes: Here is a homebrew-scale recipe for Grains of Wrath’s Citra-hopped West Coast–style IPA, which scored a 99 with our blind panel earlier this year, delighted our editors, and became one of our Best 20 Beers of 2020. According to Mike Hunsaker, cofounder and brewer, the beer “brings bright citrus and tropical notes balanced with a smooth, easy malt back.”
Mill the grains and mash at 152°F (67°C) for 45 minutes, going for a mash pH between 5.2 and 5.3. Vorlauf until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6.8 gallons (26 liters) of wort—or more, depending on your evaporation rate. Boil for 90 minutes, following the hops and additions schedule. After flameout, cool the wort to 180°F (82°C), add the whirlpool hops, spin the wort for 10 minutes, then rest for 20 minutes. Chill the wort to about 65°F (18°C), aerate well, and pitch the yeast. Ferment at 67°F (19°C). Three days after the beer reaches final gravity, rack to secondary (or remove yeast, if using a conical). After another day, add the dry hops. After 5 more days, do a force test to check for diacetyl (see “Hunting for Diacetyl,” beerandbrewing.com). After 2 days in a row of negative tests, crash, package, and carbonate. |
