add some orange peel & coriander
increase candi sugar
increase BU/GU ratio
add aroma hops at 5 min or later
decrease wheat

Notes: Brewed 8/31/14. Strike water was 172F and I hit 154F. Recirculated 2.5gal. It was still a bit high so I had to add about a quart of cold water and then a quart of hot water I hit 150F. Mash pH was 5.2 which is a bit lower than predicted, was supposed to be about 5.5 but should be fine. Hit 78% in kettle efficiency which might be a bit low, not sure. The mill was a bit difficult to use and I had adjusted the crush so maybe that was a factor. Everything went pretty well. Hit the predicted numbers and volume on the nose. Couldn't get it chilled past about 76F so I had to ice bath it for a minute before pitching but I don't think that was a big deal. Temp ended up being about 66/67F at pitching. 9/1 beer in the morining was sitting at about 62F. Evening time it was up to 66F. 9/2 I iced it down a bit last night and the temp was still at 66F this morning. Chilled it during the middle of the day and by night it was at 65F. 9/3 I chilled it a bit last night and it was 66F in the morning. By evening it had raised to about 68F. 9/4 it held at 68F but I decided to cool it a little bit and let it slowly rise throughout the day. By evening it was about 70F. 9/5 I took the beer out of the swamp bath and it was sitting at about 72F, might get a bit hotter as the ambient is around 75F. Dry hopped and took a gravity reading on 9/19/14. Racked to keg 9/26/14. Beer is quite tasty. Not as hop forward as I thought it would be, more "balanced" but for sure hoppy. Might be due to using older hops that there is a bit of a lack of aroma. |

Notes: Brewed 6/22/14. Hit 151 on the mash and recirculated about 1 gallon. Mash ph was 5.1 which is way lower than what I expected and what was theoretically calculated. Might splurge on a new meter. Couldn't get it to clear during vorlaugh for some reason either. Have had that issue before but dunno why. I had bad kettle (77%) and overall efficiency again and I am really not sure why. I don't think it's from sparging too quickly. It's possible that the pH meter isn't off and I am really getting low efficiency. The last few beers I have made have been low efficiency. Maybe I am not getting full conversion. I also didn't drain all of the wort off I could from the boil kettle so I had to top off with about a half gallon of water which may have played a factor. I think I had a lot of protein in the boil which played a factor. Temp dropped down to 60F so I heated it back up to 68F. 6/23/14 topped off with half a pound of corn sugar to hopefully boost the gravity up to 6%. Temp was 66F in the morning and had drifted up to 69F by evening. Temp in the morning was about 66F and had crept up to about 69F by evening so I cooled it back down to 66F. Temp was about 67F in the morning and crept up to 69F by the evening so I cooled it back down to 66F. Took out of swamp on 6/26/14. Took gravity reading (1.010) and dry hopped on 7/6. Biofined 7/12. Kegged 7/16/14, very clear. |

Notes: Single infusion mash at 154 for 90 mins. Raise to 168 for mash out and hold for 10 mins.
Boil 60 mins. Cool to 66 after flameout and pitch yeast. Hold temp at 66-68 until gravity is 5 points from final (1024) and then let temp rise to 72 until finished.
Low level of carbonation.
Used Northern brewer @11.0 AA rather than Target for bitterness as shop didn’t have Target.
I tweaked the recipe to add 1 of challenger at 20 mins vs .5oz at 60 and 1 oz of north down at 10 vs. .5 oz at 15 as the AA on the hops I was using was a lot lower than standard and I wanted to get more aroma from them.
Gravity as start of boil was 1059. OG was 1063 after boil, so 72% efficiency. Pitched 250 ml of yeast from previous Pub beer that had finished fermenting. Cooked wort to 67 degrees from 71.
After 24 hours gravity dropped 25 points to 1038. After 48 hours it was 1023 and wort chilled to 63.
After 70 hours gravity 1021. Added 1 oz EKG and raised temp to 65.
Raised temp slowly to 69 by day 6 when gravity was 1018. Increased attenuation to 72% from 69 standard. Also added 2 tablespoons of yeast cake after 5 days when gravity was stuck at 1021. |

(9.5 L) of water with a target mash
holding temperature of 152 °F (67 °C}.
Hold the mash temperature for approximately
60 minutes or until the conversion
is complete. Raise the temperature of
the mash to 168 oF (76 °C} and begin
sparging with 170 oF (77 oq water until
you collect 6.0 (23 L) gallons of wort in
the kettle. The total wort boiling time for
this recipe is 60 minutes. At the onset of
a fu ll roll ing boil add your scheduled hop
addition. When there are 10 minutes
remaining in the boil, add the second
hop addition and be sure to add your
Irish moss or whirfloc tablets to help with
precipitation of the hot break. At flameout,
prior to cooling the wort, add the
final hop addition. Cool the wort to 70 oF
(21 °C}, transfer to your fermentation
vessel and aerate the wort adequately.
Add the contents of your yeast starter (if
using liquid yeast) to the chi lled wort.
Ferment around 70 °F (21 oq until the
final gravity is reached, which should be
in 5 to 7 days. Rack to a secondary vessel
and allow the beer to mature another
5 to 7 days around the same temperature.
Rack into a keg or bottle along with
the priming sugar. |
