Notes: After brewing, will split this into two 1 gallon fermenters. One will be fermented with 3068 as a test for a Dunkelweizen. The other will be fermented with 1099 as a test for an Oatmeal Stout. Both will be fermented at around 58 degree ambient.
**OLD***:
Mashed for 30 min at 152, then pulled a 1.5L(6 cups) decoction of thick mash. Brought decoction to simmer/boil and boiled for 30 minutes. Added the decoction back to mash and sparged.
Only used 6 quarts to sparge instead of the pre-calculated 7.6 quarts. This is probably why my pre and post boil numbers were a little off. However, I had exactly 2 gallons go into the fermenter, so water measurement was about right. The full 7.6 quarts wouldve been to cutting it to close to the top of my boil kettle.
Pre-boil gravity: 1.041
Post-boil gravity: 1.053
Adjusting brewhouse efficiency down to get OG to the actual 1.053, changes the BUGU ratio to .45
Bottled 1.5 gallons w/50 grams table sugar in 1/2 cup boiled water. Should be 3.0vol CO2. |

Notes: 1. MÄSKA: Hetta upp 14 liter vatten till ca 73 grader och häll i malten. Tempen kommer då att landa runt 65-68 grader. Låt stå i 60 min.
2. LAKA/SPARGE: Lyft upp malten och skölj den med 10-12 liter 67-gradigt vatten för att få ut det sista sockret.
3. KOKA: Koka upp vörten och tillsätt humle enligt ovan. Första givan är när det börjat koka(60min) Andra är när det är 10min kvar av koket och sista när det kokat färdigt. Alla tidpunkter ger olika karaktär till ölet bitterhet, smak, arom osv..
4. KYLA NER: Kyl ner vörten till ca 20 grader så fort som möjligt. Tänk på att ju kallare vörten är desto känsligare blir den för infektioner/vildjäst så försök undvik kontakt med händer och andra smutsiga saker.
5. JÄSNING: Tappa över den kylda vörten i ett !RENT! och desinfekterat jäskärl. Tillsätt jästen, sätt på lock och skaka jäskärlet hårt i några minuter för att tillsätta syre till jästen. Sätt i vattenlåset och låt jäsa i 7-10 dagar.
6. TAPPNING(på 33cl flaska): Tillsätt 2 gram strösocker en tom flaska, fyll på med öl, vänd upp och ner några gånger för att lösa upp sockret. Kapsylera och låt stå i rumstemp 10-14 dagar. Då bildas naturlig kolsyra

Harvested with a combination of ale grain and extract over 3 weeks.
1 tbsp Yeast nutrient added 1 day before brew day with final feeding of wort.
Will add 1 tbsp. of yeast nutrient add pitching.
Also, for mash, added 4 litres extra water to get the water line above the filter so there is contact with the grain. But looking at the mash and the excellent stirring, I probably could have reduced the mash water.

Za mosaic dát nějaký chmel na hořkost a na etiketě není, bude tam jen chmel v kolečku.

Vaření 08/2024 (Wolf)
Kilo Wolfu do whirlpoolu a ne na posledních 5min, díky tomu zbylých 200g Mosaicu dávám na var, aby vyšla hořkosti okolo 31IBU. Dal jsem na 6kg Dry hopu, že dá 1% hořkosti, takže jsem na 36IBU, minule to ale bylo cca 37 když jsem změnil whirlpool na 40min. Mosaic mám ze sklizně 2021, Wolf 2022, tak snad ta hořkost tam nepoklesla moc.
Upravím lehce vodu do IPA (100:50 SO:Cl) profilu a pH na 5.6
Snižuju vločky o 60%. (5 -> 2)
Var v pohodě, vyšlo 12.3°P (snižuju výtěžnost na 76%).
Vaření 15.2.2022 (Blues)
- Vaření v pohodě, výsledné EPM 12.3°, před DRY HOPem 1h přidán aromazyme.
Prokvašeno na na cca 2.9°, alkohol 5.1% obj.
Stočeno 1010l, zakvašeno cca 1100l
Změnit si příště ATTENUATION u kvašení na 77%
- Stáčelo se po 29 dnech a je v tom ještě trochu taková kvasnicovost, co mi přijde, že z toho piva pak zmízí až tak měsíc po tom, když je v sudech a i se víc rozvine aroma.
- Je tam takový specifický kvasnicovo/čerstvo nádech, který jsem teď u pár piv měl, ale tady je to nejvíc cítit, nechávat to kvasit alespon 35dní, ideálně těch 40, co garantuje Panaczech. Nicméně na to taky může mít vliv to, že vařím 10hl do 20hl tanku, zaměřit se na to, jestli to z nějakého důvodu nezpůsobuje tohle.
- Celkově jsem čekal, že to bude aromatičtější vzhledem k množství chmelu a aromazinu, ale pak se to zlepšilo.
- Ten aromazine tam nějak extra necítím, těžko říct, jak moc to ovlivnil.
- Po 2 měsících mi to pivo přijde nej, pořád je občas úplně čirý a místy skoro jak NEIPA, to nevím, jak vylepšit, možná to dělají ty vločky?
- JInak celkově recept v pohodě, přístě zkusím s jiným chmelem
