Notes: Added wirflock, .5 tsp CACL, 1 tsp gypsum, .5 tsp BTB, AA and KMeta all at 10 minutes left in the boil. Ended up needing .5 gal top up to get to 5.5 gals into the fermenter.
Pitched 2 packets 34/70 rehydrated with batch wart at around 75* and put into the FC set to 50. An hour later the fridge was reading 48*. |

Notes: For single-stage, mash in at 66C/150F for 70 mins. For multi-rest, mash in at 50C/122F, raise to 62C/143F and hold for 60 mins, heat to 72C/161F and hold for 10 minutes. Mash out at 78C/172F

10-12C/50-54F until halfway through fermentation, then 14C/57F till the end. When active fermentation is complete leave at 14C/57F for another 72 hours to reduce the diacetyl. After the diacetyl rest is complete, rack on to the dry hops in a separate vessel. Beef up with up to another 2g per litre (0.3oz per gallon) of more of the dry hops if you want to boost the aroma. Continue to hold the beer warm for another 24-48 hours. Then lager it in a beer fridge for approximately 2 weeks

Notes: This is a beer created from modifying a couple recipes. Popcorn is grown locally around here and is easily accessible.
Popcorn:
Popcorn doesn't release sugar until it reaches a temperature higher than your mash, which means it has to be pre-cooked before actually entering it with the rest of the grain. To do this, grind your sugar using your grain grinder. Popcorn is significantly harder, so make sure your grinder is up to the task. Take the ground popcorn in a 6 quart pan, fill with water at least an inch over the popcorn and bring to a boil. Once boiling stir constantly so it doesn't burn on the bottom, boil for 30 minutes. Add to Mash.
