120 minute mash due to compacted mash.
Mash pH and sparge pH = from 5.33-5.48
Prebopil pH = 5.34
Post -boil pH = 5.20
3ml lactic now pH = 5.0
At 33L:
FG = 1014
ABV = 6.62
IBU = 71
3L expected to added with Dry Hopping and racking etc to bring FG to 1013 and ABV to 6%

| Notes: Mash in at 122F, hold 10 minutes. Raise mash temperature to 146F and hold for 60 minutes. Raise mash to 152F and hold 15 minutes. Then mash off at 168F. To 5 gallons of wort at 13.5P or 1.054, add corn sugar. Boil ends at 60 minutes. Cool to 64F, aerate well and pitch yeast. Ferment at 71F. After fermentation ends and yeast settles, dry hop with Sorachi Ace for 5-7 days. |

Ensure 30 min sparge
Do not push down plate on top of grain bed.
Extend boil to 80-90 mins and sparge and extra 1.5L or so.
