| Notes: The first addition of coffee is in the boil, and the grounds can be loosely bagged in a hops bag and added at flame out, to steep in the wort. It is recommended to do a secondary fermentation on this beer, to get it off of the trub and coffee grounds, and it can be racked onto the second coffee addition (cold brewed). The second coffee addition is 2 ounces of coarsely ground coffee, brewed with 12 ounces of water, cold brewed and added at secondary fermentation. If not doing a secondary, the second coffee addition can be added at bottling time. Due to the high starting gravity of this beer, we recommend purchasing two packages of yeast or to make a yeast starter. Aerate the cooled wort thoroughly, to ensure a healthy fermentation. |

Notes: This is the same as the original Brooklyn Black except, the flavor hops have been changed from Fuggles to Willamette The pound of chocolate in both is 350L. Two pound of rolled oats were added in place of one pound of 2 row. Mash the oats with 4 pound of two row at 115 degrees for 30 min. then fill tun and mash the rest of the grains. OG and FG Are actual measurements. The mash temp needs to be reduced to 150, beer was great but very thick for the ABV.

Idea is to test how well the toast of Vienna goes with spicy woodyness of Norther brewer. I love Norther brewer by itself. Will ferment it low to limit the flavors from Nottingham.
1st addition was supposed to be FWH, forgot about it so changed it to 60 min addition.
Collected 10 Liters of wort. Wort tastes sweet, toasty and creamy. No specific hot flavor detected in the wort.
Wort color - Bright Yellow gold - Beautiful!
OG: 1.049
Bottled - 23/12/2017
9.5 liter, FG: 1.008
Came out drier than expected. Yellow gold color still there but wasn't brilliantly clear. Not all of the hop particles settled, maybe that's the reason.
Tasted clean. Mild hop flavor, Vienna does stand out. Not much on the nose though.
