Notes: This is Bell's Brewery Official Hazy IPA All Grain recipe from their store in Kalamazoo, MI.
This Hazy IPA is a double dry-hopped (a combination of Mosaic, Citra, Azacca, Amarillo and El Dorado) resulting in complex peach, stone fruit and tropical notes with a dry finish and balanced bitterness.
Note: This beer is dry hopped twice. The 1st dry hop is added at high krausen (Day 3 of fermentation), and the 2nd on Day 6 of fermentation. No need to transfer or remove the 1st dry hop before adding the 2nd. |

Beta amylase
Most active: ~140–149 °F (60–65 °C)
Cleaves maltose units from starch chains → highly fermentable sugars
Too long in this range → thin, dry beer
Alpha amylase
Most active: ~154–162 °F (68–72 °C)
Chops starch randomly → mix of fermentable sugars + dextrins (unfermentable)
More alpha activity → fuller body, higher FG
