DIRECTIONS
Mill the grains and mash at 151°F (66°C) for 90 minutes.
Sparge and top up as needed to get about 8 gallons (30 liters) of wort, depending on your evaporation rate. Boil for 5–6 hours, adding hops according to the schedule.
After the boil, chill to about 63°F (17°C), aerate the wort, and pitch the yeast. Ferment at 64°F (18°C) for 48 hours, then let the temperature slowly rise to 75°F (24°C) over 5–6 days. Hold at 75°F (24°C) for 2–3 more days. Once fermentation is complete, crash to 32°F (0°C) and transfer to a freshly emptied bourbon or rye barrel (or onto whiskey-soaked oak cubes) for extended aging.
About 2 weeks before packaging, rack off the oak and add the vanilla, coconut, and coffee beans—one at a time. Taste daily, remove when the flavor is where you like it, then start with the next adjunct. Package and carbonate to about 2 volumes of CO2.
BREWER’S NOTES
We designed this recipe for barrel-aging; our sweet spot is 18–24 months. For adjuncts, we use only raw/real ingredients—no flavor extracts. In Liberty, we use a blend of Madagascar and Ugandan vanilla, a mix of dried and toasted coconut, and coffee beans we barrel-age ourselves. The quantities can vary a lot depending on origin and freshness, so adjust as desired. |

Notes: Single infusion mash at 152F.
For Saffron - Crumble the threads with pestle and mortar (1g should be about 1t crumbled). Move crumble threads to a dry glass bowl. Add two small ice cubes and allow them to melt into the saffron. When it reaches room temperature, add .5 cup boiling water. Allow to steep for 20-30 minutes and cool to room temperature. Strain the saffron from the tea. Add the tea to the wort when it reaches pitching temperature.
For Hibiscus - Bring 4 cups of water to a boil. Turn off heat and add the hibiscus petals. Steep for 30 minutes. Strain and add tea. Add with the saffron tea. |
