Notes: Single infusion mash at 154 for 90 mins. Raise to 168 for mash out and hold for 10 mins.
Boil 60 mins. Cool to 66 after flameout and pitch yeast. Hold temp at 66-68 until gravity is 5 points from final (1024) and then let temp rise to 72 until finished.
Low level of carbonation.
Used Northern brewer @11.0 AA rather than Target for bitterness as shop didn’t have Target.
I tweaked the recipe to add 1 of challenger at 20 mins vs .5oz at 60 and 1 oz of north down at 10 vs. .5 oz at 15 as the AA on the hops I was using was a lot lower than standard and I wanted to get more aroma from them.
Gravity as start of boil was 1059. OG was 1063 after boil, so 72% efficiency. Pitched 250 ml of yeast from previous Pub beer that had finished fermenting. Cooked wort to 67 degrees from 71.
After 24 hours gravity dropped 25 points to 1038. After 48 hours it was 1023 and wort chilled to 63.
After 70 hours gravity 1021. Added 1 oz EKG and raised temp to 65.
Raised temp slowly to 69 by day 6 when gravity was 1018. Increased attenuation to 72% from 69 standard. Also added 2 tablespoons of yeast cake after 5 days when gravity was stuck at 1021. |

Notes: Uma das pricipais diferenças é o uso de trigo não malteado, aveia e sobretudo temperos como coentro, cascas de laranja e até mesmo camomila.
Esses ingredientes produzem uma cerveja de cor amarelo pálido, com uma turbidez permanente7 (que faz com que fique “branca”), boa retenção de espuma e um caráter delicadamente condimentado. É leve, refrescante e muito carbonatada, apresentando um final seco e moderadamente ácido. Seu teor alcoólico é baixo e os lúpulos são usados com discrição, sendo portanto uma cerveja para ser tomada jovem.

Moderado perfume de coentro, muitas vezes com notas complexas de ervas, especiarias ou apimentadas em segundo plano. Moderado aroma frutado cítrico de laranja. Suave aroma de especiarias e ervas proveniente dos lúpulos é opcional, mas nunca deve dominar as outras características. Sem diacetil. Aromas vegetais similares a aipo, tempero verde ou presunto são inapropriados. Especiarias devem se misturar aos aromas frutados, florais e doces, não devendo ser excessivamente fortes. História: Estilo de cerveja com 400 anos de idade e que morreu nos anos 50. Foi, mais tarde, ressuscitada por Pierre Celis em Hoegaarden e cresceu firmemente em popularidade com o tempo. Notes: The original version used buckwheat honey and the flavor didn't end up coming through at all so I'm not going to keep using it.
The last one used all MO for the base malt and it came out too bready. In the next one I'm going to split the base malt between MO and Golden Promise. That might reduce the breadiness some. People have reviewed Golden Promise as tasting a little more sweet and a little less bready so hopefully that change will get me where I'm hoping to be.
I didn't really taste or smell the typical English Yeast character so I'm going to use Windsor and Nottingham in the next one. Try to get some ester production out of Windsor before I pitch Nottingham in there to dry it out some.
Adding special b and pale chocolate should darken it and add some interesting flavor. I use that combo in my dark mild and I really like it a lot in that beer, hopefully it has the same affect in a barleywine.
I plan on skipping the simple sugars in the next one. I'm finding that over 11% abv is just not pleasant for me to drink. I can get between 10 and 11 on my gear so there's no reason to add the sugar to push it higher than that. It works better in a belgian quad or RIS, but I don't think it adds anything to an english barleywine. It's not supposed to be an aggressive beer, but a satisfying and comforting beer to drink by the fire when it's cold.
I might separate some of it out after fermentation to experiment some spices/oak/fruit etc...

Notes: Christmas Pyre Ale
Sacch rest at 150F for 60 min. First wort hops added at 160F. Boil. Kill the flame, add whirlpool hops and Fir needles (2 cups volumetrically), swirl and cover for 45 minutes. Aroma hops added at 160F during chill. Chill rapidly, aerate, ferment at 64F for 14 days or so. Cold crash for 2 days to 35F, rack, fine, re-rack, and then bring back to 70F for dry hopping. Four day 2 stage dry hop. Bottle and condition for 21 days at room temps. |
