| Notes: Cool wort to 53F and aerate well. Ferment at 53F until approximately 2-5 points from final gravity, then raise the temperature to 65F keep it there for 2-4 days to reduce diacetyl (a buttery flavour produced by some yeasts). It's preferrable to lager for 1-2 months at near freezing before packaging. |

Notes: Single infusion mash at 154 for 90 mins. Raise to 168 for mash out and hold for 10 mins.
Boil 60 mins. Cool to 66 after flameout and pitch yeast. Hold temp at 66-68 until gravity is 5 points from final (1024) and then let temp rise to 72 until finished.
Low level of carbonation.
Used Northern brewer @11.0 AA rather than Target for bitterness as shop didn’t have Target.
I tweaked the recipe to add 1 of challenger at 20 mins vs .5oz at 60 and 1 oz of north down at 10 vs. .5 oz at 15 as the AA on the hops I was using was a lot lower than standard and I wanted to get more aroma from them.
Gravity as start of boil was 1059. OG was 1063 after boil, so 72% efficiency. Pitched 250 ml of yeast from previous Pub beer that had finished fermenting. Cooked wort to 67 degrees from 71.
After 24 hours gravity dropped 25 points to 1038. After 48 hours it was 1023 and wort chilled to 63.
After 70 hours gravity 1021. Added 1 oz EKG and raised temp to 65.
Raised temp slowly to 69 by day 6 when gravity was 1018. Increased attenuation to 72% from 69 standard. Also added 2 tablespoons of yeast cake after 5 days when gravity was stuck at 1021. |

| Notes: very disappointing brewing efficiency on that specific day. ended up with a much weaker wort and down-sized the total boil / fermenter volume to remain within style limits. primary @ 19 c for 2 week, racked to keg with 90g corn sugar and lagered for 3 weeks @ 19 c. cold crash @ 2 C. pleasant carbonation, light tanned thick head with good retention. very malty balanced with a fresh aroma and bitterness (did not adjust hop addition to new volume). very pleased with the result |

OG: 1071 is prior to adding sugar
Mash 2-row, corn, and wheat at 146° F (63° C) for 50 minutes. Raise to 155° F (68° C) and hold for 15 minutes. Mash out at 168° F (75° C). Collect wort.
Boil for 70 minutes. Cool to 67° F (19° C) and pitch starter (Boulevard uses a proprietary house Belgian yeast; the suggested strains are purportedly closest in character). Ferment at 70° F (21° C) until high krausen.
One day later, boil 1 lb corn sugar (or 1.5 lb if kegging) with enough water to dissolve, then cool and add to primary. Ferment until terminal gravity of 1.009 is reached. Rack on to dry hops and hold 3 days. If bottling, prime with 1 cup (207 g) of corn sugar at packaging for approximately 3.3 volumes of CO2. If kegging, carbonate to 3.3 volumes.
White Labs WLP670 American Farmhouse Blend ale yeast or Wyeast 3724 Belgian Saison (2 L starter)
Strike grains with 4.93 gal of water at 157.6 °F.
Mash at 146 °F for 60 min.
Vorlauf and lauter 3.02 gal in your first runnings.
Add 4.48 gal of sparge water at 168 °F.
Vorlauf and lauter 4.48 gal in your second runnings.
Your combined runnings should be 7.5 gal. |
