Notes: Meskes med 40-45 liter vann på ca 66 grader i 75 min. Kjør på med utmesk de siste 15 min. 80 grader, 60% på termostat. Hell av 5 liter og slå over hvert 5 min.
Skyll sakte i minst 90 minutter. Bruk omtrent 30 liter skyllevann som holder rundt 100 grader. Når tapping er ferdig så slås dunkene oppi kokekaret i samme rekkefølge som det ble tappet ut, det som evt er igjen av mesk slås i under kokingen.
Kokes i 90 minutter, følg tilsetningsoppskriften på humla. Kjøles ned til 20 grader før gjæres tilsettes i to gjæringskar. Vørteren fordeles likt i de to gjæringskarene, noen liter av gangen for å fordele temperaturen sånn noenlunde. Settes til gjæring i jevn temperatur rundt 20 grader i ca to uker. Etter fire dagers stormgjæring hives den siste tørrhumlen oppi. Karboneres på flasker med ca 7 gram sukker pr liter øl. Lykke til. |

I have based this recipe upon the original Hoegaarden clone I did a few years ago.
I have upped the Coriander seeds and the oranges so we shall see how this turns out.

Notes: This is variation on my citra honey and ginger recipe again with the hop selection dictated mainly by what I had left over from previous brews. I've upped the overall hoppage a bit this time round but the quantity of ginger was toned down to aim for a more subtle hint rather than the quite full ginger beer taste of the original.
The honey, crystal malt and "first wort" hops were steeped in 4 pints water at 65 degrees for 40 minutes.
For the boil I started with 1kg extract in 16 pints water until final 15 minutes when the rest of the extract, the chopped ginger and strained honey mixture.
I cooled the wort in the bath to 35 degrees then put it in fermenter and topped up to the full volume running the added water through the hops in the kettle to rinse out a bit more hop flavour.
"Where's the rhubarb?" You might be wondering. I split the 5 gallon batch at secondary fermentation and tried various combinations as follows:
1 gallon 30g stewed rhubarb
1 gallon 20g stewed rhubarb
1 gallon 10g stewed rhubarb + 10g Kohatu hops
2 gallons 30g Kohatu hops
Left in secondary for a week before bottling. I'll update this description to let you know how it turns out.
UPDATE: So first results are mostly positive. The best batch is definitely the 10+10 which is very drinkable and seems to be nicely balanced with enough rhubarb to give an interesting slightly sour but pleasant flavour. I'm very pleased with this one. The 20 and 30g rhubarb batches are good too but the 30g especially is very dry. The rhubarb does seem to add a dryness along with the sourness you'd expect.
I wouldn't do the 30g Kohatu dry hopped again - the hop flavour was too much and a bit grassy. |

Notes: 3/25/11 - 1.019. 1.25 oz muddled mint leaves, 6 oz of baker's chocolate racked into secondary fermentor. Tastes real good, slight off taste that lingers, otherwise real good.
3/28/11 - 1.018 - Real strong mint flavor, hopefully the carbonation and cold serving temp will dull the mint out a little. Want to bottle ASAP so the mint doesn't grow anymore. Wish I could get some more chocolate and less mint. I do love mint, but I don't know if others will. |

Notes: Made some tweaks recently to my batch #1.
Compared to 2016 Heady Topper mine was coming out slightly too dark by 1 or 2 SRM and was also slightly too candy-ish, which I attribute to both the Caramalt and the Amarillo hops %s. I reduced both in this batch. Actually subbed Comet for Amarillo. I also swapped Turbinado (Sugar in the Raw) with plain old corn sugar (Dextrose) to eliminate even more darkness/residual sweetness. Finally I upped the Columbus and lowered the Simcoe.
For the Malt Bill use the following brands:
Thomas Fawcett Pearl Malt
Thomas Fawcett CaraMalt
Canada Malting White Wheat Malt
Primary fermentation target 68*ambient. Allow to rise to the low 70s as primary fermentation nears completion.
"Conan" yeast is essential for this recipe to turn out correctly. I use the Yeast Bay's "Vermont Ale." There are a few other brands that are based on the Conan strain. Harvesting Conan from cans of Heady Topper would be best. If you can't get Conan, you could try English strains Wyeast 1968, White Labs 007, or Safale US-04, but they may not attenuate low enough and could result in too much sweetness.
For the bittering hop addition use 10 ml of HopShot at 90 minutes (boil). This should add 117 IBUs.
Allow wort to cool to around 180 degrees and add whirlpool hop addition.
Split the Dry Hop into 2 additions over 8 days (4 days each.
Note: Shooting for 130 IBUs total, mostly from the hopshot. The very late additions should not have noticeable utilization (maybe 10%).

Notes: This turned out great. Head holds the entire glass long. Make sure to pitch 2 packs of yeast. This finished fermenting at day 5 cold crashed down to 35f at 5 degree steps every 12 hours. Total crash after reaching 35f was 7 days. Crystal clear and very crisp. Enjoy. |
