Ingredients for 5.5 U.S. gallons (20.82 L)
3.65 lb (1.65 kg) German Pilsner malt
5.6 lb (2.54 kg) German wheat malt
0.8 oz (23 g) Hallertauer Mittelfruh pellets, 3.4% a.a. (60 min)
Wyeast 3068 Weihenstephan Weizen ale yeast, 1 quart
Original Specific Gravity: 1.052
Final Specific Gravity: 1.012
Boiling Time: 90 minutes
IBU: 8.3
SRM: 3
ABV: 5.3%
Primary Fermentation: 9 days at 62° F (17° C).
Directions:
Start with RO water, add 2.2 g calcium chloride to mash, add 2.7 g calcium chloride to sparge. Use a double decoction mash schedule with the following rests. Acid rest: 113° F (45° C) for 15 minutes. Protein rest: 126° F (52° C) for 15 minutes. Mash at 146° F (63° C) for 20 minutes, then 158° F (70° C) for 20 minutes. Mash out at 167° F (75° C) for 10 minutes.

Notes: Yummy! Extra hoppy, which is fine, was thinking as good as the previous year's Honey Pale Ale was, it was a bit on the low side for hop flavor.
This batch is more assertive in the hops, nice golden color. OG and FG were within a hundredth of a point of predicted...WOOHOO!!
The Safale S-04 generated an interesting yeast cake on the bottom of the fermenting bucket. It was thick and more solid than any other I can remember, and it looked almost like a pancake with a spongy (pock-marked) appearance. It stayed intact for the longest time during the bottling process.
Fermented for 14 days at 71° the entire time, in a 6.5 gal plastic bucket. OG was 1.073 and FG was 1.017 for 7.35% calculated ABV. Right on target! This was the first time I tried bottling with shrink-wrap labels and they worked beautifully. |

Notes: A low hop, pale, light wheat ale, this beer takes a new shot at a brew favorite. Kaffir lime leaves are the real star here. It adds a refreshing twist to a perfect summertime beer. Spicy, tart, and crisp, kaffir lime strikes a perfect balance between sweet and bitter. Along with coriander seed and dried orange peel, the leaves accent this Belgian style ale's unique flavor profiles by adding a taste reminiscent of Southeast Asian cuisine. Tamarind, another exotic fruit prized in SEA for both its tartness and medicinal qualities, will give a sweet and sour zing to the beer's finish.
