Notes: Calculated OG 1.106, when we brewed this it was 1.122. Certainly bigger than we were expecting, however after 5 days the gravity had dropped to 1.029 for a 12% beer. Blended it with another batch that used the same malt bill but subbed agave syrup (16 fl oz, listed as turbinado in the recipe) for the molasses (1/2 cup for 5 gallons).
Bottled 2 gallons with 1/4 cup sugar - Took two months to carbonate but came out great.

Notes: Mash Grains at 152F for 60 min, batch sparge at 168F. Add Dextrose at end of boil, chill wort to 65F and ferment for 4 days, raise to 68F for remainder of fermentation. Dry hop 3-5 days before bottling.

08/01/2017 - 2 Liter 8.1 oz of light DME OG 1.045 by Refrac. Krewsin that evening on stir plate with healthy vortex. 08/02 - next morning healthy F going on and unable to any longer make a vortex in the wort. Evening continued F action, still no vortex. Shook up the beaker and left stir plate on, it did seem to be moving things around. no sign of settling yet. |

Sacch rest at 150F for 60 min. FWH get added at 160F as the boil ramps up. 90 min boil. Pitch and ferment at 66F. When fermentation begins to slow add first dry hop. Cold crash to 40F once fermentation is complete. Rack to CO2 purged secondary, warm to room temp and dry hop once again. Rack to CO2 purged keg and force carb to 2.0 vols. Around 44F and 9psi or so for serving. Enjoy fresh! |

Notes: Sub yeast: WLP 500 (Monestary Ale)
Pitch the yeast with the wort temperature at or just below the minimum recommended temperature (65F) and let it rise slowly over the next 4 days to the high end of the range (upper 70s). This will help balance the variety of flavors that a particular yeast is capable of producing at different temperatures. Yeast can generate heat up to 7-9 degrees above the ambient temperature during fermentation, so you need to keep the ambient temperature below the minimum fermentation temperature for the first couple of days so the wort does not get too warm too fast. |
