Notes: This beer was brewed with the late runnings from the Maple Imperial Stout II. 1.8 gallons of late runnings with a SG of 1.020. Additions of 8 oz of D-180 Belgian Candi sugar nad 12 oz of dark DME were added to bring the OG to 1.062 at the end of the 100 minute boil. 1/2 package of Safale Abbaye was pitched into 1 gallon of wort. It was fermented at 70 degrees. |

Notes: Use rice hulls in the mash to avoid a stuck sparge. Spread the pumpkin on a cookie sheet or baking dish, sprinkle with pumpkin pie spice and bake for 30 minutes at 350 degrees F before adding to the Mash.
Steep spices and Lactose in 1 cup hot water for 10-15 minutes, cool then add. Consider adding more pumpkin pie spice (a tsp at a time) to desired flavor and aroma.

Notes: 2 packets of yeast is 0.58 pitch rate.
Bring strike water (8qts) to 159 in pot on the stove, once at 159 remove from heat (should drop to about 149F with grains). Add grains in bag to pot at stir well, leave for 1 hour. If you want a dry stout remove the grains after 0.5 hours and stir in your malt extract, do not apply heat let is rest for 1.5 more hours. This will allow the beta to break down the complex sugars in the extract.
In a separate pot heat sparge water (8qts) to 180F.
Pull grain bag out of kettle and set in colander on top of pot.
Once grain is out reapply heat. Sparge grain until no sparge water remains or the kettle is filled to the desired level.
Bring to a boil and continue as usual. |

Notes: Ferment with normal pitch of Trappist HG, and then one day later pitch both 1098 (English Ale) and 3711 (French Saison) to improve esters.

Notes: The original version used buckwheat honey and the flavor didn't end up coming through at all so I'm not going to keep using it.
The last one used all MO for the base malt and it came out too bready. In the next one I'm going to split the base malt between MO and Golden Promise. That might reduce the breadiness some. People have reviewed Golden Promise as tasting a little more sweet and a little less bready so hopefully that change will get me where I'm hoping to be.
I didn't really taste or smell the typical English Yeast character so I'm going to use Windsor and Nottingham in the next one. Try to get some ester production out of Windsor before I pitch Nottingham in there to dry it out some.
Adding special b and pale chocolate should darken it and add some interesting flavor. I use that combo in my dark mild and I really like it a lot in that beer, hopefully it has the same affect in a barleywine.
I plan on skipping the simple sugars in the next one. I'm finding that over 11% abv is just not pleasant for me to drink. I can get between 10 and 11 on my gear so there's no reason to add the sugar to push it higher than that. It works better in a belgian quad or RIS, but I don't think it adds anything to an english barleywine. It's not supposed to be an aggressive beer, but a satisfying and comforting beer to drink by the fire when it's cold.
I might separate some of it out after fermentation to experiment some spices/oak/fruit etc...
