2020-5-8: After making a batch of this it's way too bitter at 56. Dropped the FWH to 10g/12 IBUs for a total of ~37 which should be fine even though it's below the 50 IBU minimum for the style. NWP is listed at 48 IBUs.
2020-5-26: bitterness mellowed. it's ok now but I'm keeping the
IBUs in the 40s for next time. |

My reccomendation is to use Vermont IPA (vermont ale, Conan) yeast for this beer. However, using american ale yeast will still yield a fine product. |

Notes: Brewed 9/14/2013 Hit 150 for the mash temp. Strike water was 174 and it hit 156. Had to recirculate and add about 3 cups of cold water to get it down to 150. I was trying to over shoot the temps so I could account for temp loss on the re-circulation but I guess I did too much. pH was 5.3. Boil gravity was 1.048. Hit 5.75 almost perfectly again. Chilled down to 73F and pitched the yeast. Got a slower start from this brew because chilled it down more than usualy with the pre-chiller. Day 1 and 2 of primary fermentation temps were between 66 and 68F. Day three is crept up to 70F and I cooled it down to 69F. By day 4 it had climbed up to 70F again and I decided to stop temp control. By evening of day 4 it had crept up to about 73. Day 5 it was up to 75F. I cooled it in the evening down to 73. Day 6 it was still at 73. Took a gravity reading on 9/27 and it finished out at 1.012 so same as last time. 9/29/13 used 1/2 Tbsp of biofine for clarifier. 9/30 did another 1/2 Tbsp of biofine. Seemes to be clearer on 10/1 when I started the cold crash. Kegged 10/3, seemed to be clearier than last time. |

Notes: Brewed on 4/6/2014. Strike water was 170F so I recirculated about 2 gallons and stirred to get it down to about 151F. pH was 5.2 so I am wondering if the pH meter might be off as that is a bit low. Got about 76% kettle efficiency which I think might be a little lower than usual. Was hard to get the brew clear with the vorlaugh. Wonder why might that be. Got low efficiency again, maybe I sparged a bit too fast and had a too vigorous boil. I think I am going to try the shorter dry hop method on this brew as well. 4/7/14 the brew is sitting at 65F. Temp had drifted up a little to about 67F by evening so I chilled it down but it dropped to 62F. Seems to still be quite active. 4/8/14 temp had climbed up to 65F by morning. Added in .75lb of corn sugar today. Temp drifted up to 70F by the evening so I chilled it back down to about 64F. The morning of 4/9/14 it was also sitting around that temp. By evening it had risen up to about 68F. Dry Hopped on 4/24/14. Gravity reading was 1.012 on 4/25/14. Biofined 4/29/14. Bifined again on 5/2 as it was still a bit cluoudy. That puts it at a total of 4tbls and hopefully that's not too much. |
