Notes: Goal for this recipe - drinkable, hoppy session beer. Want some body & malt character to go along with the hops, so i included the carapils and victory malt in the grain bill. I've enjoyed other beers strongly hopped with noble / noble-like hops, so decided to try single hop with Styrian goldings. Hoping for a little peppery, but still hoppy profile. |

Created a starter of wild airborne microbes and left in a mini coolship overnight - left for five days and then added dregs from last sour batch which contained 3 fonteinen and cantillon dregs and displayed a huge amount of that character.
will practice the solero method and will obtain another 2 barrels and blend.
Transferred 1010@ Belgian golden ale with Brett and lactobascillus etcinto this barrel on 1/08/16 after removing one gallon to add apricot.

General Instructions:
Mash and boil are straightforward. Add the candy sugar with 5 minutes left. Pitch yeast at 75 and keep it warm for a couple of weeks, then let it sit undisturbed for a month or two until the brett is done. And for heaven's sake don't fear the 3724! I didn't dry hop this beer, but it would be very good with some dry hopping. You could do Amarillo to boost the citrus, EKG to compliment the brett, or more Saaz.

Notes: Yeast is of the utmost importance. I have a starter from Crooked Stave's Vieille, good source of brettanomyces. With that I will dump dreggs from Oddwood Ales Saison to impart sacch. strains, as well as pedio., and lacto. strains. The second dreggs will be from Timmerman's Oude Gueuze, lots of great critters living in there. Whether or not this will create a great sour will be determined in a year or two. |
