Primary Fermentation @ 18c. Secondary @ 22c.
Short condition (1 week) @ 10c.
Sliced root ginger at 10 min boil (3 grams per liter).
Few more grams per liter during aging to adjust to your taste (thats why I do the conditioning process, not required for other reasons, just to adjust ginger flavor intensity). This step is performed by using Ginger extract / tee , 2g per liter, directly into the fermenter. |

Notes: El agregado de acido al agua dio muy bajo pH, alrededor de 3 y fue necesario diluir con agua fresca. Hay que mejorar la estimacion de pH necesario del agua. Finalmente se logro 5.86 pH del agua.
6.5 gal @ 163 F dio un poco baja temperatura de mash, probar con 167-168F. Quedo en mash tun 8 gal de mash.
Sales agregadas al mash. pH quedo en 5.12, muy bajo.
Mash tun con bazooka y falso fondo. Con recirculacion permanente. Se tapaba el bazooka. Contracorriente para destapar que agrego aire al mash.
Por error pase 8.5 gal a la brew kettle. Densidad 1032 antes del hervido.
Quedo 1 galon en mash tun.
Enfriado falto hielo, muy lento.
Se conecto por la bomba pero no fue necesario usarla. |

Notes: If anyone is curious about this beer. The measurements for the grain bill are not accurate. This recipe is designed from my Irish Red called French Big Papi Imperial Irish Red. I rinse the mash grains again after making Big Papi. Until I make it I can only assume what I'm going to end up with so just to get an idea of the OG, this beer is a 3rd of the original grain bill. I changed the Hops and Yeast. I was drinking my Lil Papi Irish Red and it seemed to me that a raspberry amber would be delicious. The concept is turn your trash into stash. Since imperial beers leave behind so much converted sugars and have lower efficiencies, the next best thing to do is turn it into another beer. 2 beers for the price of one.. Enjoy!
The water absorption for the original grain bill is 2.7gal based on 0.15gal of water per 1 lb of grain absortion rate. That's a ballpark so I am removing 2.5gal from second rinse of the grain bed. |
