We had the idea to brew the most bitter beer in the country without it tasting like complete ass. Would have loved to keep this as a sMasH, but we need some sweetness with all of the hops. This thing was insane. Bitter as anything, but the backbone was decent and the beer wasn't undrinkable. One just couldn't have much of it without lamenting one's own life.

All went smoothly with the boil and cool (a little warm of a pitch temp but ran out of time and water just isn't cold enough and not enough frozen water or ice bath. Added the Clarity Ferm as that seems to do nothing but positive things (clarity, gluten reduction, no flavor affect). I was able to boil 3.5 gallons with no boil over (careful watching and temp adjustment). My target was 7% and 70. We'll check out the balance of bitter to heat as I think that's the baseline for a solid IPA....final gravity was 1.011. tasted great with subtle bitterness and great clarity.
