Notes

Had a pound of Centennial and some leftover Citra to work with so, let's see how they are as bittering hops. All went smoothly with the boil and cool (a little warm of a pitch temp but ran out of time and water just isn't cold enough and not enough frozen water or ice bath. Added the Clarity Ferm as that seems to do nothing but positive things (clarity, gluten reduction, no flavor affect). I was able to boil 3.5 gallons with no boil over (careful watching and temp adjustment). My target was 7% and 70. We'll check out the balance of bitter to heat as I think that's the baseline for a solid IPA....final gravity was 1.011. tasted great with subtle bitterness and great clarity.
