Notes: I`m primarily using Heather honey in my mead. At least 60/40 when I use a mix of Heather and Flower honey.
2 liter starter @1.04SG, 2 stage.
Filipendula ulmaria ( called Mead spice locally ) was traditionally used as "flavoring", and is this brews source of tannin. Caution; Filipendula ulmaria is a natural source of salicylic acid. Steep the Filipendula ulmaria in 1 liter of water so that it makes a strong, pungent tea. Add the tea to the fermentor the 3rd day.
Add commercially prepared Apple Must/ Apple Juice ( without preservatives like Potassium Sorbate, Ascorbic Acid is ok tho ) to the fermentor the 3rd day. The pectinase will help break down any pectin.
Leave to ferment for 30 days. Store for an additional year after botteling. Enjoy =)
End notes:
It was, to my best knowledge, uncommon to use hops in mead. Nor was it common to use any kind of malt. Hops, malt and Achillea millefolium ( a hops substitute, called Beer king locally ) was most commonly use for brewing beer ( beer was for every day use and mead for special occasions ).
You could add a small amount of clove, ginger and nutmeg to make the brew spiced as well ( I use these spices with restraint as I do not want my mead to taste like gingerbread ). Boil the spices for 15 minutes and let the Filipendula ulmaria flowers steep to make the tea.
Carbonation was also rare at best, and then only lightly ( due to lack of pressure proof containers ). |

Notes: 1. Heat 1 gal to 168.5*F with kettle. Preheat oven to 155*F.
2. Place grain in white crock in bag.
3. Mash in by pouring heated water over grain in crock. Place crock in oven with thermometer. Wait 75 min and monitor temp.
4. Heat additional 2 qt of water to 170*F
5. Remove grain bag and squeeze into white crock. Move grain bag into brew kettle and pour 2 qt heated water over grain bag. Stir, sit for 5-10 minutes, lift, drain, squeeze.
6. Add runnings from white crock to brew kettle, top off if needed, and begin to boil.

Notes: WOW I usually do not like wheat beers but WOW! This is taste amazing. Very simular to blue moon but with a heavier mouth feel and hint of honey in the finish. I will brew this one again!
I cracked A bottle for a few friends while I was having a little beer tasting party at my house and watching the Portland Timbers mash FC Dallas for the 3rd time this year. The beer was not yet carbanated but had a very distinct honey flaver and honestly tasted just like blue moon. |

Notes: Kettle Sour Steps
Starter
-Create a starter with 200 g DME, 2L of filtered tap water, and a pinch of yeast nutrient.
-Add 1/2 tsp 88% lactic acid (should get pH down < 4.5).
-Chill to ~110ºF, add 2 cups uncrushed rye malt.
-Top the starter off with carbonated water. This will purge oxygen and reduce headspace.
-Cap flask with airlock. This will ensure the aerobic competitors do not get the oxygen they need to produce off-flavors.
-Keep the starter as warm as you can (~110ºF is best) for 2-3 days. Strain then pitch directly into wort.
Mash
-Mash in, collect wort, and reduce pH to 4.0-4.3.
-Boil for 15 min (no hops!).
-Cool to 100F and pitch starter.
-Purge headspace with CO2, cover w/ Press'n Seal plastic wrap.
-Hold as close to 90-100F for 24-48 hours.
-Check pH in 24 hours, hold for additional time (if necessary) until pH is 3.2-3.6
-Once desired pH is reached, complete boil and continue as normal. |
