“This recipe may seem overly simple, but that is for a reason. The true purpose of the intentionally basic grain bill and hop schedule is to highlight a truly unique yeast strain. Omega Yeast has released a single strain of Norwegian Kveik, and the results from this strain are truly impressive. Originally isolated from Omega’s Hornindal Kveik yeast blend, Lutra™ is a rapidly fermenting yeast strain with an incredible neutral flavor expression within a wildly remarkable temperature range. Fermented at traditional ale temperatures around 68F, Lutra™ produces nearly lager-like beers with an exceptionally clean and crisp finish with minimal ester production. On the other end of the temperature spectrum in the low 90F range, Lutra™ remains quite clean yet expresses a gentle ester profile that brings to mind the flavors of a traditional Kolsch strain. In addition to its incredibly clean and crisp flavor profile, Lutra™ is an absolute beast with an insatiable hunger for malt sugars - full attenuation can be achieved in mere days. With lower temps, I have found that this recipe can attenuate in 4 days, while elevated fermentation temperatures pare this down to 3. preboil gravity should = 1.037
Overestimated effieciency so preboil = 1.034. Did 90 minute boil.
Primaried 3 weeks around 65F then bottled and carbed to ~2.5 volumes CO2. Tastes fantastic. Good balanced bitterness with huge hop aroma and flavor paired with just enough malt backbone. |

Notes: Porridge is oat and milk, so this is both a sweet and milk stout. I've balanced the sweetness with a high alcohol content to give the impression of bitterness without actually taking from the sweetness. Tempered with aroma hops, this is an unusual Irish stout, usually associated with dry astringency. A great option for those who can't quite take to Guinness. |

Notes: Primary yeast pitch with British Ale yeast: ferment for 4-5 days.
Second yeast pitch with Champagne yeast, and dry hop with 0.5 oz Saaz leaf Hops; ferment for 3-4 days.
[Original recipe calls for 7# Vienna malt. 12.2 oz cane sugar may be needed to get ABV to 4.5%. If able to get hands on more Vienna malt... Remember to get additional 1.45 lbs to get ABV to 4.5%.]
**An acquaintance from Queensland said that an Australian brewery would use Champagne yeast in their recipes... I am unsure as to why, but I deduce that with a fresh brew, the Champagne yeast will provide an acidity/crispness, since it will convert all residual sugars. I can only assume that there needs to be an ale yeast to pitch initially, so that there are some appropriate breadiness and esterification to the flavors. A high amount of dextrin-rich malt may counterbalance the inevitable tart flavor.

Notes: The recipe is a modified version of "Raucous Red Ale" from The Brew-Master's Bible. It now includes partial mashing and a malt substitution to include leftover ingredients.
I decided to shy away from the traditional American ingredients (Crystal, Carapils, etc.) and use Belgian specialty malts to provide the caramel flavoring base. The Gold LME will be split between two additions to keep the color as light as possible. The Belgian Special B and Aromatic malts will provide the dark amber color. The balanced blend of malts and hops should create a robust final product. |
