For water, add calcium chloride to reach about 100-150 ppm chloride. Don't use gypsum or epsom salt because the sulfate will accentuate the bitterness.
Mash at 150 °F (66 °C). Collect wort and boil for 60 minutes, do not add any hops. Cool the wort to 100 °F (38 °C) and transfer wort to a fermenter or keep in pot. Pitch the Lactobacillus of your choice, and add lactic acid as needed to achieve a pH of 4.4. If you are in a rush, sour as warm as you can reliably hold (up to 115 °F/46 °C), ideally above 80 °F (27 °C). Approximate souring time 1–3 days to reach pH 3.3–3.4. You can measure by taste, but the sweetness of the wort can make acidity seem milder than it will post-fermentation (even though the pH will rise slightly with fermentation and dry hopping). Once the desired acidity is achieved, return the wort to the kettle and heat to 180 °F (82 °C). Once the temperature is reached, turn off the heat and add the hops. Allow them to steep for 20–30 minutes before chilling to 70 °F (21 °C). Aerate and pitch a large starter of Brett (most commercial Brett strains are not packaged at a high enough cell-count to pitch directly). A 3-L starter on a stir-plate for a week should be adequate. Once the gravity stabilizes (two to four weeks), the beer is ready to package. If you are bottling, add the dry hops to the primary fermenter. If kegging, bag and weight the hops (I use new nylon knee highs and glass marbles) adding them directly to the keg during natural conditioning. Aim for 2.7 volumes of CO2. |

Mark 3
- Upped Ale malt to 6kg from 5.9kg
- Cut Dark Choc from 0.4kg to 0.2 and added 0.2kg of Light Choc.
- Switched from Mangroves M44 to Wyeast 1056
- Dropped boil time to 60min from 90min
- Motueka dry hop dropped to 20 from 50g.
- Added 50g of Waiemea for dry hop
11/2/18 - SG: 1013. Looks cloudy brown not black, tastes quite fruity, Dry hopped in stainless hop sleeve.
18/2/18 - Kegged and carbed (after 48hr cold crash to 0.5C), doesn't looks brown and not black?
28/2/18 - Pours dark cloudy brown, tastes great, still has the slight roasted flavours save plenty of hops but just not the colour.

Gecko died in batch and had to re-boil wort. Turned out great, smashed a whole keg on the house boat.

Mashed with 4 gal at 161F. Too hot but got impatient waiting for it to cool. Probably lowered to 158 over the course of 1 hour mash. Sparked 3 times with 10 gal total of water. Boiled for 90 minutes and added hops at 60, but boiled for another 15 min to get volume down to 6.5 gallons. Whitlock at 25 minutes. Racked #18 sour blonde into secondary and pitched this brew on top of yeast cake that is WLP550 and dregs of sanctification from RR. Will ferment at 65F for 1 month. OG is 1.061 so still shitty efficiency at 63%
Racked to secondary on 1/24/16 and SG was 1.020. Pitched roselare blend that will bring this down a lot over the next few months |

Notes: Heat up 3.5 gallons of hot water. Place into sterilized fermenter, stir in the 10 pounds of sugar and stir until dissolved, add 10
cans of welches frozen 100% pure grape juice to the hot water, stir until dissolved. Top off with Cold water. Stir well to airate then Pitch Rehydrated Lavlin K1-V1116 Wine Yeast. Allow 10-14 Days in the primary, and 7-10 days in secondary. Re-rack Secondary with one packet of knox Gelatin (dissolved in 1.5 cups of warm water. Mix well before racking back into glass secondary. Allow 5-7 days for clarification. Condition with wine conditioner/sweetener to taste. Bottle and Enjoy. Best Served Chilled. |
