Notes: Add juice of lime(s) to 3 cups of water, bring to a boil then turn off heat. Steep teabags for 7-10 mins, cool for a few mins then add to carboy. Add nutrients and juice into carboy with an aggressive pour to help aerate the juice. Add yeast, put an airlock on then place in a cool (60F-70F) environment.
Primary for one month, then rack to secondary, topping off with juice. Leave in secondary until crystal clear (usually 2-3 months or so from pitching) then bottle with 4oz priming sugar.
Takes about a month to carbonate, tastes good after 3 months, but just gets better with age. I usually start opening bottles about 5 months after pitching.

Notes: 1. Add gypsum to 4 gals water in brew kettle, stir to dissolve.
2. Heat water to 155 degrees.
3. Add amylase enzyme; pilsner, honey, & carapils malts; and chopped potatoes to brew kettle. Raise temperature to 155-157 degrees and let items steep for 30 minutes then remove from the brew kettle.
4. Add ~3.5 gals water to wort to bring amount up to 7.5 gals. Bring wort to boil.
5. After 45 minutes boil, add CTZ hops.
6. After 65 minutes boil, add honey, maltodextrin, and yeast nutrients.
7. After 70 minutes boil, add Whirlfloc tablet.
8. After 72 minutes boil, add Idaho #7, Idaho Gem, and Experimental ID-158 hops.
9. After 75 minutes of boil, turn off heat and add Idaho #7, Idaho Gem, and Experimental ID-158 hops to wort for 20 minutes of whirlpool/hop stand as part of resting period.
10. Add distilled water to top-up wort to ~ 7-7.5 gallons.
11. When fully cooled, transfer to fermentor, aerate, then pitch yeast.
12. After high krausening subsides (3-4 days) add Idaho #7, Idaho Gem, and Experimental ID-158 hops to fermenter for dry hopping.
13. After 7-8 days in fermentor, transfer wort to Corney keg and refrigerate.
14. After 1-2 days of refrigeration, force carbonate with pressurized CO2.
As a 4th generation Idahoan who lives where the bulk of Idaho hops, barley, and potatoes are grown, and whose great-grandfather owned a bar & dance hall in Idaho City, Idaho Territory, brewing the beer he served using nearby Idaho spring water, it only seems natural to brew an IPA featuring Idaho-based ingredients ... and to carry on the family tradition. |

Notes: Mash: Add 2.04g of Calcium Chloride and 1.2g of Gypsum to water (3 gal) prior to heating. Mash at higher temp (160F) for better mouthfeel. Causes more dextrin in the mash. Pre-boil pH should be between 5.3 and 5.5.
Boil: Dissolve flour in small amount of warm water and add at 15 min. Post-boil pH should be between 5.0 and 5.2
Whirlpool: Chill wort to 170F and let hops steep for 20 minutes. Then chill wort as usual.
Primary: Add 0.68g of Calcium Chloride and 0.4g of Gypsum for every gallon of water that is needed to top to 5 gal in the primary.
Bottling: pH should be around between 4.2 and 4.6. |

1 x WW APA Can LME (the can adds 30IBU and 6.5 SRM of colour)
1 x 3.0kg bag of WW DME
4 x US-05 Yeast (3 extra yeast required as 1 comes with WW APA kit)
Grains (Steep for 30 minutes at 66 degrees)
500 grams of Vienna Malt
450 grams of Medium Crystal Malt
300 grams of Munich Malt
200 grams of Acid Malt
Remove Grains and sparge with 4 litres of boiled water
Do a 60 minute wort boil to ensure long chain sugars are broken down (US-05 does not handle long chain sugars and so you will end up with residual sweetness from unfermented sugars if boil time is not 60 minutes)
Hops (additions starting with 20 minutes to go.)

Notes: Single infusion mash at 153°F for 60 minutes. Adjust mash pH with phosphoric acid (target 5.3 pH). Lauter then boil for 60 minutes. After flameout, chill to 160°F and add whirlpool hops (10 minute contact time) hop addition. Knockout. Pitch yeast starter along with. Ferment at 66°F. Add dry hop at high krausen (day 2). Rack to keg and force carbonate to 2.6 vol. (5.2 g/L) CO2.
Tasting notes:
- not a fan of the sacc trois yeast character. Too "Belgium-y". No biotransformation with yeast strain either. Very dry, slight alcohol. Dropped clear, see photo.

I added 1.5 lbs of blackberries post flame out. But I did freeze, smash and gently heat the berries before addition.
