Notes: My 2.0 version is way hoppier tasting and smelling thanks to the double dry hop. Well balanced with hops and malts and a nicer aroma and taste. The body is less IPA and more pale ale now.

Notes: The wort sat in the fermenter without fermentation kicking off due to accidentally putting the yeast in the freezer.
It was originally pitched with White Labs WLP013 London Ale Yeast however was pitched two days later with Fermentis Safale - Englist Ale Yeast.
It was decided to do a second dry hop of 78 grams of Citra on day 5 to do a post fermentation dry hop. |

Notes: I use Cider House Select Cider Yeast for this. I pitch it with 2 cups of the mash after the mash is done and cool to the 73 degree.
Boil the gallon of apple cider and the hops for 15 min (only add half of the bag of hops should be .5 oz. add 2nd half at the 1st rack as a dry hop leave for 30 min then pull from cider.)
when the 15 min is up turn the heat off and add the 2 pounds of honey (I use Dutch gold Eucalyptus Blossoms) to the boiling cider. Remove 2 cups of the liquid and let cool to 72 to 76 degree. ( I use a magnate stir for my yeast started and it also helps cool the liquid faster.)
This will not fit in a 1 gallon carboy I use a 2 gallon buckets for this.
I have also done it where I remove the amount of cider to honey where it would fit the one gallon carboy but the abv comes out to about 13% that way and it taste more like a desert wine. |

Notes: It has been quite a while since I made this and my Fiance accidentally through away my notes so I'm writing this down from memory I don't remember the OG or FG but It turned out Way higher ABV than stated above About 22%. After pouring Wort into carboy with 2 gal cold water I aerated for about 30 min.
I let ferment for a little over a month (This wasn't intentional I ended up moving and didn't have the time to bottle but I'm glad it happened) Then bottled normally.
My original plan had been to make a Honey Dunkelweizen But when all was said and done it tasted much more like a porter. Very Smooth taste with a slight sweetness, but don't let that fool you it packs a mean punch! I wouldn't hop in a car after drinking one if I were you! I hope you enjoy it as much as my friends and I did cheers! |

Notes: I was originally planning for this to be a simple light ale, but the hops I used (which were all grown in NZ) provided a much stronger bitterness than I expected, so I upgraded this to a pale ale. I used a standard two-stage fermentation. My actual specific gravities are below:
