Notes: People loved this beer. It worked out really well. If I was to brew again, however, I would go for more body and malt character. Probably by increasing the aromatic to 5%, munich to 10%, and adding in 7.5% wheat. |

Notes: With the berry sensory notes that Sundew Ale (OYL-401) produces, it naturally fits many pale, fruity styles. I wanted to see how the yeast pairs with the flavors of a dark beer (dark chocolate, dried fruit, toffee, coffee, and roasty goodness!) and settled on a stout. By design, this recipe sits in the middle of various stout subclasses and with a few simple adjustments can be tailored to the personal tastes of the brewer. For example, mash with less grain at 148°F for higher attenuation and a drier finish to make a dry Irish stout, or increase the amount of oats to 10-20% to make an oatmeal stout.
The higher mash temperature gives body without being overly sweet, the dehusked and debittered Carafa III adds beautiful roasted color without the astringency, and the flaked oats help with a nice stable head. You may substitute Maris Otter for the Golden Promise. Other possible substitutions include honey malt or a medium crystal malt for the Golden Naked Oats (or whatever you prefer – it is your beer!)
First Gold reflects the more traditional English hop character and also adds some fruity character with a touch of spice. The Ariana hop choice brings a higher alpha acid percentage to the recipe, and also lends some blackcurrant notes. When added to the whirlpool, the hops don’t make the beer overly bitter or overpower the other aromas. For a more traditional English take, I’ve always been a fan of East Kent Golding or Fuggles.

YEAST
OYL-401 Sundew. The temperature range is relatively broad, from 64-78°F. We recommend slight overpitching or a fresh starter for more berry notes. Sundew will shine at fermentation temperatures in the mid-70s.
Even though the boil is 90 minutes, add the first hops at the 60 minute mark. I prefer this method, so that I open a 1 oz packet of hops and dump it into the kettle as opposed to weighing it out or ending up with partial packets lying around. |

Infuse at 150 for taste on the dry side. If you go lower to 148 or so, no biggy.
====Batch#1. 3/5/2013====
- Efficiency was 86%(!) so I had to cut out the .75 lb of sugar I was going to add.
- Added .2oz Magnum for bittering to make up for oddly low Chinook AA%.
- Mashing ended up at 152. I had something to do, so left it for 2 hours and it got down to 147. That may explain the very high efficiency.
- Got close to 8 gallons in the kettle, so I boiled for about 30min down to 7.2gallons then added my 60min hops & started timer.
- OG was 1.068 for exactly 5 gallons (inc starter)
Thoughts after watching ferment: Maybe this will be too thick & dark. Could cut crystal out altogether, raise sugar to 1.b, & drop the 2 row to 6lbs for 1.014 FG. Would make it a lot dryer and lighter.
- FG after 12days = 1.009. Wow! So dry. That means 7.74% ABV. Glad I didn't add that sugar.
- Dry hopped after 14 days.
====Batch#2. 4/1/2013====
- Lowering the 2row to 8lbs. Removing 1lb Munich. C20 to C10.
- OG = 1.057 :-)
- FG = 1.006 (BRIX 5) // ABV 6.84%
- Tasting: Bittering IBU's need to come down a bit for this dry a beer. Next time aim for 60.
- After 2 weeks, the beer somehow tasted rounded and less hop-forward. Thinking the Simcoe was old and the Nelson was too soft. I would say, drop the initial Chinook way down

Notes: Recipe is based on extract recipe obtained from Reddit as well as the description from Mother Earth's website. Note that for this 1 gallon batch. I used about 3/4 of a vanilla bean and found it could've used more. Vanilla bean was split, scrapped, chopped, and all tossed right into the primary (or using a hop bag if desired).
Personal Touches:
1) Real recipe uses Warrior hops - using Glacier to lighten cohumulone.
2) Mother Earth states 18 IBU, 6.0 SRM, and 5.0 ABV (1.048 OG & 1.011 FG). Slight variations to this are present in this recipe.
3) This recipe pushes for slightly more body than the 'Medium Body' advertised. This is done via higher mash temperature and SO4/Cl ratio of less than 1. |
