Getting rid of the last of my grains, so using at least a bit of everything I have on hand (except golden naked oat- nobody needs that shit), as well as lots of different hops. So put it all together, and you get a Black IPA. More crystal malts than I'd normally use in a modern IPA, so adding the sugar, and lower mash temp, to dry it out a bit.
Because of all the different crystal malts, I’m mashing all my dark grains (compared to mash capping; I want the extra bitterness to balance the extra sweetness).
This will be 2.5 finished gallons into keg. Expecting 0.25 gallon loss to both trub and hot side hops, and maybe 0.15 gallon loss to dry hops. So want 2.9 gallons into fermenter. I lose 0.6 gallons during the 60 min boil, so start boil with 3.75 gallons. Will lose about 0.35 gallons to grain absorption in BIAB mash, so total water needed will be 4.1 gallons. Use 2.75 gallons in mash, and 1.35 in sparge.
Might split the dry hops and do two rounds.
