Notes: Boil for 90 minutes with the above hop additions to acquire 5.5 gallons to the fermenter.
Ferment at 63-64°F for 3-5 days, then allow the fermentation temperature to rise naturally to 68°F. Rack to secondary (if desired) after the first week for another 10-14 days. Bottle using the 4oz of corn sugar for priming, or keg.
Fall/Thanksgiving Beer Option:
This beer can easily be made into a delicious Fall/Seasonal beer by replacing the Cascade dry hop with a teaspoon of Jamaican Allspice at flame out. That is all it takes. Remember a little Allspice goes a long way!
All-Grain Ingredient Substitutions
Use the following in place of the malt ingredients listed above.
10.75 lb Maris Otter malt
1 lb Munich malt
1 lb Caramel 80°L malt
0.5 lb Carapils malt
Mash @ 155° for 60 minutes. Sparge with 168° water to obtain 7 gallons pre-boil volume. Follow the directions from recipe above, starting from the boil.

Notes: Wanted to make something in the range of a IPA and New England type. I backed off the added water after a smaller boil than I normally do. ALso, I think the infusion step mash did the trick to add everything from those grains as possible for a thicker beer. Only tasting so far is when it's heading to the secodary fermenter glass carboy. Gravity at secodary transfer is 1.022. was 1.077.
The WhiteLapbs Pacific yeast was expired in Mid July and free. so not sure the efficacy with it, but good job with sa-05.

Notes: Sour Mash: 3 Days before brewing take 3 oz 2-row and and add to 150 degree H2o and cover. Add to grain bag on brew day.
Steep wheat and dextrin in 3-gallons of H2o at 152 degrees for 30-mins.
Remove grains and rinse into brew pot. Add the FW hop addition of Styrian Golden hops, malt syrup, and dry malt ext. Bring to boil. Add Magnum hops and boil for 60 mins with the additional at their time. |

| Notes: Mash crushed grains in a small stockpot in about 3 litres of water for 45 minutes. Strain wort through a colander or strainer into your brew kettle, then rinse grains with about 1.5 litres of water at 65 C. Add 5.5 litres of water and start to heat. Bring wort to a boil and boil for 60 minutes. Add hops according to schedule above. Five minutes before the end of the boil, stir in the liquid malt extract. Transfer wort to a clean, sanitized fermenter and top up with clean water to make 20 litres. Aerate, pitch yeast, and ferment at 20 C. Dry hop with Amarillo hops in the secondary fermenter. |
