Notes: Start fermentation at 63, then bump up to 66 after 3 days, then 68 after 3 more days to finish fermentation, then slowly lower to 40 to cold condition for a few weeks (or keg warm, then crash in keezer and lager for a couple weeks prior to serving).
Fine with gelatin after crashing, either in FV before kegging, or in keg before carbonating. |

Notes: Brewed May 6, 2022. Mash in at 122F. Hold 30 min, infuse boiling water to get 145F, hold 20 minutes. Pull 1/4 decoction, heat to 160F, hold 20 min, heat to boil, return to main mash to get 160F, hold 30 minutes. Extra rice hulls gave good runoff. Recirc 8 gallons, lauter to boiler, boil 65 minutes, 2 whirlfloc, cool, collect 11 gal. Used 2 qt yeast starter, 1 qt per 5 gallon fermenter. 7/12/22 - Excellent amber ale! Hops level is perfect - showcases the maltiness of the beer. |

** Amélioration pour la prochaine fois **
- Modifier le profile de l'eau: Augmenter la dilution de l'eau à 30%
- Améliorer l'efficacité en modifiant la glacière pour éviter BIAB, le gâteau de grain sera ainsi moins dense.
- Surveiller la température de l'eau après 30min, la remonter avec de l'eau bouillante si < que 65 degré.
- Attendre un peu plus longtemps lors du hotbreak et insérer les premiers houblons lentement pour ne pas créer une réaction/débordement.
