Notes: Step by step
Heat 13.9 qts. (13.1 L) of strike water to 162 °F (72 °C) and mix with grains. The mash should stabilize at about 149 °F (65 °C). Hold at this temperature for 60 minutes, then raise temperature to mash out at about 168 °F (76 °C), either by infusion of boiling water, decoction, or other means. Vorlauf until wort runs clear then begin the sparge process. Collect 7 gallons (26.5 L) and bring to a boil. Total boil time is 75 minutes, adding additions as indicated. After boil is complete, turn off the heat, add final hop addition, and give a long stir to create a whirlpool. Rest for 15 minutes.
Chill the wort to 75 °F (23 °C). There should be about 5.5 gallons (21 L) of wort in your fermenter. Add yeast and aerate wort if using liquid yeast. Place your fermenter in a warm place in the 80–90 °F (26–32 °C) range. Allow to ferment for four weeks, or until a stable gravity is reached. Bottle or keg after fermentation is complete, targeting a carbonation level of 2.8 v/v. |

Notes: Add 6 litres of chilled spring water to Fermentor before adding wort, depending on pre boil gravity.
Check the dilution calculator to see if a further 1 or 2 litres is necessary.
Brew day:
Pre boil gravity 1.048...bit less than predicted.
Dilution calculator suggested 1.5 litres to bring the wort to target gravity. Ended up with 15 litres...so efficiency must have been pretty poor...
Added 1 orange zest and about 3g of lightly crushed coriander seeds for last 5 minutes of the boil.
Yeast rehydrated and pitched at 18c. Took 36 hours to come down to that temp.
Day 6 of fermentation down to 1.016. Just a few more points to go and a good few days to get there. Smells amazing. Will report on flavour once it's chilled.
Definitely has a Wheat beer flavour. Slight hop flavour from the Hersbrucker. Not a massive fan of this hop. Not really into medicinal flavour in my beer...
Day 8. Down to 1.014. Smelling even better now. Taste later.
Day 11 and no movement. Near enough to predicted FG to bottle. Will be a very pleasant beer when it is chilled and has a bit of fizz.
15L in the fermentor. 2.2vols for bottling will need 81g of sugar. Sugar solution to be poured into fermentor, stirred and left to mix.
This tasted great a Belgian Witbeir but hardly any orange or coriander, which is fine by me. But the surprising thing with this was the way it morphed into a Belgian Blond with a couple of months conditioning.
2nd Brew.
Very smooth brew day. Substituted Golden Promise for Belgian Pale Ale malt and Mittelfruh for Hersbrucker. Near on 20litres into the fermentor but 1.047...a good bit below target.
Day 6 1.014. Bumped temp to 19C will bump to 20C for the last three days. Sample tasted great, Residual sweetness and definitely wheat beer flavour.
Day 10 1.013 barely moved. Keeping temp where it is for next three days and then bottle.
Day 13 and 14 FG1.013. 42 bottles now in the ferm chamber to carbonate. 107g of sugar in solution added to fermentor and mixed. Bottled directly from there.
Tasted 6 days after bottling. Amazing Witbeir. Didn't need orange peel and coriander. Tastes great. Very happy with it. This recipe is a keeper. |

Add 17.8oz of bottled water to create 1L starter.

Pitch one ? packs of dry yeast S-05
Stir plate for 24-48hours. Add entire volume to fermenter
*Mash (60 min, 5.5pH) [Batch Sparge]
Pick up tube pointing straight down
Heat 9.5 gallons of water to 165F.
Add Lactic Acid, CaCl, Gypsum, Epsom, Campden while heating mash water.
Mash ~20 pounds of grain with 9.5 gallons of water for 80mins. Regulate temp, circulate, and stir to 155F mash temp. Let rest for 20 minutes.

When mash is done, hoist bag and let drain into kettle.
Collect 7.7 Gallons to start boil

30 min remaining - Place hop spider into kettle
25 min remaining - Add 1oz CTZ
10 min remaining - add yeast nutrient , malto, Irish moss
1min remaining - add 1oz Citra and 1oz Nelson
*Flameout
Recirculate with pump and lid off. Let naturally cool to 190F
*Whirlpool (20 min)
Cool wort to 190F.
Add 3oz Citra and 3oz Nelson to hop spider
Use pump to WP for 20 mins with lid on.
*Exchillerator
Set up exchillerator and begin to run hose water
Recirculate wort back into kettle and cool down for 20 mins (Hops still exposed)
Transfer 5.5gal to directly to the fermenter
*Fermenting (18 days)
Day 0 - Blowoff tube. Temp 66F
Day 4 - Temp 69F
Day ? - Attach gas manifold. Let temp naturally settle to room temp. After FG
Day 10 - DH1 (2oz Citra, 1oz Nelson). Room temp
Day 12 - Soft Crash, 50F
Day 14 - Transfer to DH2 Keg (2oz Citra, 3oz Nelson). Hook up Floating dip tube. 5 psi at room temp. Flip keg often for 48 hours.
Day 16 - Put keg in fridge for cold crash (35F for 48 hours)
Day 18 - Closed pressure transfer to serving keg
