Notes: Great aroma and taste on the front, then quickly a sharp unpleasant bitterness. Will let sit cold and carbonated for a few weeks then try again. seems like the ending volume was low, maybe just over 4 gallons, making the hops too much. Or just too much hops. |

Notes: Test batch V2, a Rye IPA using the same hopping schedule as Test Batch V1 except I have dropped the Magnum bettering hop, I don't want the bitterness from the hops and the rye to clash.
More Lactic Acid 80% this time based upon this recipe calculator suggesting 15ml will get me down to a mash pH of 5.2. We shall see, may dust off the pH meter and test it.
Same dry hopping and will use the same method of transferring into a secondary before adding the dry hops. |

Notes: Heat 5.5 gallons of strike water to 160F.
Add water to mash tun and then add grain.
Mix until saturated & add water additives to lower or raise pH+
(optional).
Heat x gallons of sparge water to 168F and then add to mash tun
Mash out into boil kettle.
Raise temp to boiling (212F) and begin timer for 60 minutes.
Add oz, oz, & oz boil hops at 60 minutes remaining (in the boil).
Add oz, oz, & oz hops with 30 minutes remaining (in the boil).
Flame out 1 hour after boil began.
Begin chilling and add oz, oz, & oz whirlpool hops.
Transfer to sanitized fermenter when temp reaches below 68F.
Aerate the wort by rocking the (closed) fermenter.
