Notes: 1800 mil starter
dissolve cocoa powder with 5 oz corn sugar
in 1 qt hot water to make syrup.Add syrup
45 minutes into the boil.
2-3 vanilla beans soaked for a week
in rum added to secondary.
This beer finished at 1.020 due to the
unfermentables and high mash temp.
The F.G was 5.0 a bit lower than
expected.Efficiency was way off.
In my 14 years of brewing this is my
personal favorite beer.
Head retention and lacing last to the
bottom of the glass.
Batch #2 finished at 1.015 and shows
in final ABV.This is where I want this
beer to finish,it is more to the style.
Brewhouse efficiency was around 62% in first batch.Batch #2 was 73% which is
about right for my system.
ABV 5.70 nice winter beer with some
alcohol warmth.First batch was thin.
Chewy,nice chocolate-coffee flavors
with a touch of vanilla.
I`ve made 4 batch`s of this and found
that this last batch from 1-2-14 has hit
it`s peak after 4 months.
The longer it ages the better it gets.
Batch 3 and 4 I made this year (2014)
Jan. and April.I`ve got it dialed in
at 5.70 ABV and recipe is solid at 70%
efficiency.If you try this recipe I hope
you have good luck with it.The rum and vanilla beans are what make this standout
for the final taste and richness.I would
recommend to age at least 2 months.

Notes: I`m primarily using Heather honey in my mead. At least 60/40 when I use a mix of Heather and Flower honey.
2 liter starter @1.04SG, 2 stage.
Filipendula ulmaria ( called Mead spice locally ) was traditionally used as "flavoring", and is this brews source of tannin. Caution; Filipendula ulmaria is a natural source of salicylic acid. Steep the Filipendula ulmaria in 1 liter of water so that it makes a strong, pungent tea. Add the tea to the fermentor the 3rd day.
Add commercially prepared Apple Must/ Apple Juice ( without preservatives like Potassium Sorbate, Ascorbic Acid is ok tho ) to the fermentor the 3rd day. The pectinase will help break down any pectin.
Leave to ferment for 30 days. Store for an additional year after botteling. Enjoy =)
End notes:
It was, to my best knowledge, uncommon to use hops in mead. Nor was it common to use any kind of malt. Hops, malt and Achillea millefolium ( a hops substitute, called Beer king locally ) was most commonly use for brewing beer ( beer was for every day use and mead for special occasions ).
You could add a small amount of clove, ginger and nutmeg to make the brew spiced as well ( I use these spices with restraint as I do not want my mead to taste like gingerbread ). Boil the spices for 15 minutes and let the Filipendula ulmaria flowers steep to make the tea.
Carbonation was also rare at best, and then only lightly ( due to lack of pressure proof containers ). |

Notes: Mash grains BIAB for 45-60 mins then add DME just before boil.
Mash temp 158f. Higher levels give a less fermentable wort and a more full-bodied beer.
Roast Cocoa nibs at 300f for 10-15 minutes.
Add cocoa nibs, dark bakers chocolate and first addition of coffee at flameout. Steep or whirlpool it for 5-10 mins. You can skip this coffee addition for a more balanced or less coffee flavored beer. Then maybe only do .5oz coarse ground coffee in secondary.
Filter off hops, coffee, cocoa into fermenter.
After ferment rack onto coarse ground coffee for 7 days. Coffee can be soaked overnight in vodka.
Coffee Must be coarse!
I boil about 1/4 gallon every 15 mins in a 4 gallon (16 quart) kettle so it took me an hour to boil off 1 gallon. I adjusted recipe to start with 2 gallons.
Head Retention: It's possible oils from the cocoa or coffee beans can reduce head retention. Choose dry beans. Or soaking them in vodka can help.

Notes: I really enjoyed this in a citra combo so decided to solo it in it's own IPA.
The solo Meridian ale had a Juicy Fruit Gum smell to it when it finished.
Mash temp 148f-150f should result in a more complete conversion to simple sugars for fermentation so its not such a heavy IPA.
Let it Hopstand (I used whirlpool for lack of option)
After fermentation (give it 2 weeks) dry hop with Meridian for another 5 days.
Transfer to secondary and cold crash in the fridge (if you can fit it) for 2 days or more before priming and bottling. |

| Notes: This beer is very floral and friuty. An agreeable beer for sure. leaves a flavor in your mouth long after its drank.Agreeable by the many that have tasted it. I recently had a party of about 30 and shared it among other brews I have created. This one was the one everyone went back to. I seriously believe you wont be disasapointed if you try it.
