Notes: Mill the grains and mash at 154°F (68°C) for 60 minutes. Recirculate until the runnings are clear
Boil 2–3 hours, or until you reach target gravity; add the hops when you estimate you’re about 60 minutes from reaching the target.
After the boil, chill to about 64°F (18°C). Aerate the wort vigorously, then pitch a generous, healthy, and happy yeast starter.
Ferment at 67°F (19°C) until just before the end of fermentation, then allow to rise to 72°F (22°C).
Once fermentation is complete and gravity has stabilized, crash to 35°F (2°C), package, and carbonate to about 2.3–2.4 volumes of CO2.
BREWER’S NOTES
Gravity: Be patient on brew day and expect a long boil. As an option, be prepared with some dry malt extract (DME) to help achieve target gravity, in case of mash inefficiency or time limitations. |

Ingredients, adjusted for what is available at Micro Homebrew:
- 16 lbs -- Rahr, Premium Pilsner
- 14 oz -- Bairds, Black Malt
- 14 oz -- Crisp, Roasted Barley
- 14 oz -- Simpsons, Naked Oats
- 14 oz -- Briess, Chocolate
- 14 oz -- Bestmalz, Melanoidin
- The original recipe directs to use a 2 qt/lbs mash thickness, but that won't fit in my mash tun, so I'm going to shoot for 1.5 and just monitor the conversion using a refractometer.
- I typically mash in my brewing kettle without a false bottom and then transfer to my plastic cooler mash tun in order to conduct the sparge. The transfer only takes a couple minutes and this strategy allows me to use direct heat as needed to adjust the mash temperature as things cool.
- I also typically mash out at 168°F or so for 10 minutes. This recipe instead directs you to sparge with 170°F water. I intend to skip the mash out step and go directly to the sparge.
- 7.7 AAU -- Magnum (60m)
- Yeast Nutrient (use as directed on bottle)
- Sparge with enough water at 170 °F (76.7 °C) to collect 7.5 gallons (28.4 L) of runoff
- Top up to 5.5 gallons in the fermenter as needed.

Notes: Mash the grains at 70°C for 60 minutes. If you are including a mash-out step, raise the temperature to 76°C and hold for 10 minutes. Sparge with 76°C water to collect 24.7 liters of wort. Boil for 80 minutes, following the hops schedule. At flame-out, stir the wort to cool slightly and add the whirlpool hops. Let rest for 20 minutes before chilling the wort to slightly below fermentation temperature. Aerate the wort with pure oxygen or filtered air and pitch the yeast. Ferment at 15–16°C.
Add the dry hops toward the end of active fermentation, when the SG is about 1.020–1.024. Let rest for 4 days or until fermentation is complete. Cold crash to drop the hops out of solution. Rack to secondary or keg.
