| Notes: Chimay Clone, but I am using different hops and a different yeast then what was in the recipe I found. Regarding my hops and IBUs. According to Brewer's Friend, Tettnanger are 4.5% aa and Cascade are 7% aa. I adjusted it down to 6% aa for the Cascade. I had the Belgian Candy Sugar on hand, and it was $4.99, but I added current Midwest Price less 10% to the recipe. |

Notes: - Protein rest 135F for 30 min ( pH 5.5-5.3)
- Mash at 155F for 45 min, mash out 170 for 5 min
- Chill to 95-100F (35-38C). Measure pH. Add Lactic Acid (88%) to wort until pH reaches ~4.5, add Probiotic Juice Drink into kettle, cover wort with film wrap to prevent O2, Hold temperature at 95-100F for 24-72 hours. pH should be between 3.2-3.6
- Boil 30 min and Hop Addition as per hop bill.
- Chill and rack to carboy. Pitch M12 Kveik Yeast and ferment as per instruction.

Add 1/2 tsp yeast nutrient with 15 mins of boil left
Add 1/2 tsp Irish Moss with 15 mins of boil left
Need 3.5L starter, could substitute WLP 001
Mash grains with 5 gallons of water at 155 degrees for 60 minutes
Vorlauf then sparge slowly with 175 degree water.
Add the hops and Irish moss according to times indicated in the ingredients list.
Add the Sumatran coffee and two chocolate varieties at the end of the boil.
Pitch the yeast and ferment at 68 degrees until final gravity is reached.
Transfer to Unitank, avoid any splashing.
Add Kona coffee and condition for one week, then bottle or keg. Carbonate and age for 2 weeks.
To brew this Kentucky Breakfast Stout clone, perform an infusion mash at 155°F (68°C) for 60 minutes. Boil for 90 minutes, adding hops, chocolate and coffee as specified. Ferment for two weeks at 65°F (18°C). Soak 0.25 oz (7 g) toasted French oak chips in 1 cup (237 ml) Kentucky bourbon for two days. Soak ground Kona coffee in 1 cup (237 ml) boiled, cooled water and leave overnight, covered, in refrigerator. Strain out grounds and add cold-brewed coffee, bourbon and wood chips to sanitized secondary. Rack fermented stout onto this mixture and condition in secondary at 55–60°F (13–16°C) for 2 to 6 months.

Notes: Not sure what the grape juice will do in terms of gravity readings but should add a bit. Splitting a gallon to have half in the boil to go through all of primary fermentation and pour the rest in after primary fermentation hopefully retaining more grape flavor.
Keep in primary for about 3 weeks. Will age 2.5 gallons of this batch in a wine barrel and bottle condition the rest. Not sure how the hop freshness will come through but could be good in the bottles after 2 weeks. Should age in the barrel for 3-6 months. |
