| Notes: This porter is goofy hot, but draws you in with it's sweet heat goodness. Smoky notes from smoked cherry malt and chipotle peppers dance with cherry flavoring, and drench the palate with lava-like chocolate. Notes: just read in IPA: Brewing Techniques Recipes and the Evolution of India Pale Ale by Mitch Steele regarding hop utilization that "a significant drop (as much as 33 percent) occurs during fermentation, because a drop in pH as the wort is fermented to beer causes a reduction in the solubility of isomerized alpha acids."

mash: 4 gallons water at 165.1 degrees, achieved close to target of 150 degrees, initial measurement was 150.4 degrees.
