Notes: Rinse the rice and let dry. Spread the rice in a sauce pan over medium/low heat for 10 minutes, stirring constantly.
Crush all rice and small amount of 6-row separately. Add to 1 gallon water. Rice mixture gets 5-min rest at 158F, then boiled for 30 minutes (should turn gooey). Add to main mash at Sacc. infusion.
Add water to cereal mash as needed if low. |

Stir in dried malt extract and bring to a boil.
Boil 60 minutes, adding hops at times indicated.
6.25 AAU Fuggle hops (60 min)

With 15 minutes left in boil, remove from heat and add liquid malt extract. Stir well to dissolve, then resume heating. At the end of the boil, cool wort and transfer to fermenter, adding enough water to make 5.0 gallons (19 L). Ferment at 62 °F (17 °C).

Notes: To ensure full conversion, mash for 90 min. Lower mash temp and longer boil are used to make sugars more digestible.
Nelson Sauvin hops are preferred, but are usually unavailable. Thus, this recipe tries to reproduce a citrusy hop aroma and bitterness.
No starter to increase banana flavours.
Hop amount may seem high, but my high IBU brews are usually not all that hoppy. Perhaps my LHBS gets old/crappy hops. If you know your hops are strong/fresh, perhaps halve the amounts here to prevent a hop bomb. |

Notes: After active fermentation is complete, puree 5 lb mango* in a food processor and boil for 15 min, then add it to the empty secondary fermenter. Rack primary over mango mash in and gently stir. Keg in about 2 weeks. Make sure it tastes almost too fruity, as carbonating and conditioning will cause it to fade.
*I bought 10 lb of mango, which was pretty close to 5 lb of mango flesh after peeling and removing the pits. |

Notes: Yes, this is built for a non-alcoholic beer. Aim for a good alcoholic beer to get a goon N/A beer. It is easiest to keg. Carbonating in bottle is difficult.
Ferment normally and keep on the primary yeast cake as long as you would like. Rack into boil pot and bring temp up to 182-187F and hold temp. Small bubbles will appear and a foam will develop on the surface of the beer. This is the alcohol burning off. When foam is gone cool and rack to secondary (I rack to keg) Dry hop for two weeks minimum. Carbonate normally.
If you want a good beer with alcohol then ignore the previous and ferment normally. rack to secondary and dry hop for 14 days. Carbonate and enjoy.
