Kilned over a low cherrywood chip fire for approx 3 hours. OG was about 1.060. Will check FG soon. Tasting notes: not very "Grassy" or "seedy" like most bottled porters. Appropriately mild hops, the kilned malt really does a good job in providing a nice bitter and rounded balance. Nice, coffee-like finish, lasts over 30 seconds.

Boil for 10 min only to sanitize, add whirlfloc at boil, then add salt and coriander at 5 min before flameout. Pre-acidify wort down to ~4.5 pH by adding 4 ml 88% lactic acid, then chill to about 100° F and then add Goodbelly shot. Cover/seal kettle and hold for ~24-48 hrs. Bring to a boil to kill lacto (add any hops here if you want a few IBUs). Chill to ferm temp and pitch yeast. To experiment with flavor additions, post fermentation - split into five 3 qt amounts, each in a one gallon glass jug. Keep one as the base Gose, but add flavor (fruit/veg/herb/etc) to other four... Not a lot of "Really good" Cherry Wheat beers out there but this one is the best one I have found thus far. Citra Hops really makes the difference here especially in the dry hop, for this recipe I went light but for those true hop heads out there you can go more but remember you also have the equivalent of 2 gallons of tart cherry juice in this batch. Keep in primary for at least 7 (recommend 10 or more) days, then add you cherry juice concentrate and dry hops to the bottom of your secondary before transferring. Remember that dry hopping plus the added cherry concentrate may slow the fermentation process down so be ready for that and don't rush it. It should take about 3 weeks to complete but any time your working with fruit juice in beer it is a good idea to check it with a refractometer or hydrometer to make sure fermentation is complete. Preboil is 7 gallons. 11# 2 Row 1# Chocolate Malt 1# Crystal 40 4 oz. Black Patent 1 oz. Roasted Barley 8 oz. Flaked Barley Mash at 150 degrees for 60 minutes Add 8 oz. of Malto Dextrin to boil at 20 minutes Hops. 1 oz. Northern Brewer at 60 min. 0.5 oz Cascade at 60 min. Hydrate a package of Nottingham. This ferments vigorously, so use a blow off or be prepared to wipe up some beer. Ferment for 2 weeks, then rack to keg or secondary.
