Notes: A grainfather ibu kalkulátora meghülyült. elvileg múltkor 30g magnumot adtam hozzá és 38-as ibu lett most meg 40 fölé lőtte. Szóval jó lesz az 20 g is, de a komlók mennyisége az ibu miatt még változhat. A víz sem ez amit beírtam.
Sexarder lager 2 és a duplicate ami a remetés alapján készül annak a szövegei vannak itt alább, de maláták és komlók elérhetősége miatt azon változtatnom kell, de az eredetit is lefőzöm majd valami új néven. RO víz 1gCaCl, 2g CaSo4, tejsav, hogy a ph 5,3körül legyen. 1 lépcsős dekokció. 50perc után kiveszem kb a felét forralom jó 15 percig majd visszahűtés(2l) után megy vissza. A 120g carahell meg kb 50g caravalami. Beélesztőzés 17 fokon.Erjedés szigorúan 9 fokon maximum. Ászokolás több hét. A komlókombináció még változhat, de a legutolsó adagot a hűtés pillanatában adom hozzá. A még forrásban lévő cefrét elkezdem közben átpumpálni egy másik edénybe. A másik leírása: Remete csurgó víz. 1 lépcsős dekokció. 50perc után kiveszem kb a felét forralom jó 15 percig majd visszahűtés(2l) után megy vissza. A 120g carahell meg kb 50g caravalami. Beélesztőzés 17 fokon.Erjedés szigorúan 9 fokon maximum. Ászokolás több hét. A komlókombináció még változhat, de a legutolsó adagot a hűtés pillanatában adom hozzá. A még forrásban lévő cefrét elkezdem közben átpumpálni egy másik edénybe. Erjedés szigorúan 9 fokon maximum. (A diacetil pihentető után vissza lassan 5 fokra majd szép lassan le 1 fokig hetek alatt. na ez a másiknál nem így volt)Ászokolás több hét. A komlókombináció még változhat, de a legutolsó adagot a hűtés pillanatában adom hozzá. A még forrásban lévő cefrét elkezdem közben átpumpálni egy másik edénybe. Ugyanazok az értékek voltak, de mivel szarabb lett a kihozatal és a mennyiség ezért a másikat hozzáigazítottam. LÉNYEG: minimum 5 hónap ászokolás !!!!! olyan lett, mint a paulaner sárga cimkés söre. Ez a verzió lehet kicsit elfog térni a hozzáférhető maláták és komlók miatt, de az eljárás ez lesz. Ja a ph 5.3 legyen. |

Notes: Followed standard process - used RO water
Added salts and heated strike to 162.
Mashed in and mixed/recirculated which had mash temp a little high at 155
Mixed to reduce and measured PH which was a bit low ~5 but I can't trust my PH meter
This led to mash temps being a little off from having to heat to raise temp
Sparged to 6.5 gallons using RO water I put in a bucket and adjusted to 5.4 ph
Took reading on pre-boil OG of 1.045 which later I found was incorrect from my tilt post-boil reading of 1.043.
Boiled and followed hop schedule and added whirlfloc with 15 mins to go
Couldn't hook up chiller inside to sink so I had to whirlpool to try and cool and eventually just transferred to fermenter and cooled in chamber down to 50
Pitched decanted starter and extra pack of OYL-106. Yeast took about 36 hours to start showing signs of activity. |
