Directions: The day before brewing the Pliny the Elder clone beer recipe, prepare a yeast starter sufficient for an OG of 1.080. On brew day, mash the crushed grains at 150°F in approximately 5 gallons of water. Lauter and sparge to collect 7.75 gallons of wort. Bring to a boil. Add hops according to schedule. Mix in corn sugar just before flameout. Ferment at 67°F, slowly raising the temperature to 70°F towards the end of primary fermentation. When most of the yeast has settled, transfer to a secondary fermenter and add the dry hops. Dry hop for 7-10 days. Bottle or keg for 2-2.5 vols CO2 of carbonation. |

Notes: Adding 3 oz citra & 3 oz mosaic immediately after 60 minute boil during cool down.
Made an 800 ml starter - 24 hours, cold crash for 3 hours, will decant and pour off top.
Added 2 gallons cold water, and immersion chiller. Will top off fermenter to close to 5 gallons to hit OG target.
OG was spot on - 1.070
Fermentation kicked in after about 6 hours |

| Notes: The quest continues! This one is an intensely kettle and dry hopped Double IPA featuring a combination of Galaxy and Mosaic hops! The base of Two features just pale and dextrine malts, resulting in an appealing glowing yellow appearance in the glass. We experience flavors and aromas of juicy tangerines & tropical fruit balanced by a grapefruit note on the finish. You might say it brings a little dankness also; Cheers! |
