Yeast is Conan (used by Alchemist in Heady Topper). The yeast bay version. Some scuttle-butt is that it doesn't attenuate all that well (but it gets better with generations!). So mash low and use sugar to bring FG down.
Hop Stand:
drop cascade, citra and mouteka at flame-out.
Chill to 180F.
After 5 min drop nelson and galaxy for 10 min stand.
Chill to ~70F, pitch yeast. |
