Notes: had this shmaltz st lenny's belgian double rye ipa a couple years ago and it was awesome. only saw it in the store a couple times. never really could find a good clone until now. i dont think shmaltz even makes this anymore.
recipe was originally posted on their site (no longer there) and then scaled down by a homebrewer and posted on hbt. pasted below.
this recipe i put in almost exactly. theres no fawcet crystal ii so i used crystal 60. the recipe also says crystal 60/80 so i put in 80 but in practice i would probably combine the two and just just the 60.
also i took liberty in estimating efficiency at 77 which put the beer at 10%.
mods i would need :
* scale up for my system efficiency
* substitute extract for at least part of it. think i would still need to mash though at least for the rye and wheat. might need to use some base malt in the mash too to have enough diastatic power
* hops are a little crazy. could probably simplify and just use one or two or three hop varieties
* would need a decent sized starter

This will need to be mashed in kettle and then transferred to lauter tun.
"To brew this Spencer Brewery Trappist Ale, mash in temperature at 122°F (50°C), heat up to 145°F (63°C) and hold for 45 minutes. Heat to 162°F (72°C) and hold for 15 minutes then check with iodine.
Heat to 172°F (78°C) afterward and transfer to lauter tun. Bring to a boil and follow hop schedule.
Chill beer to 66°F (19°C) and pitch yeast and ferment through for one week.
Then transfer into a green beer tank, leaving the spent yeast behind.
Chill to 41°F (5°C) and mature for one week.
Add cane sugar and neutral re-fermentation yeast for bottling. Fill bottles and allow three weeks for conditioning, with re-fermentation temperature at approximately 68°F (20°C)." |

YEAST
White Labs WLP800 Pilsner Lager or other Czech lager strain
DIRECTIONS
Mill the grains and mash at 149°F (65°C) for 30 minutes. Aim for a mash pH of 5.2–5.25, adjusting acidulated malt as necessary. Use an iodine test to ensure starch conversion (see “On the Road to Conversion,” beerandbrewing .com). Vorlauf until your runnings are clear, then run off into the kettle. Sparge at 166°F (74°C) and top up as necessary to get 6 gallons (23 l) of wort—or more, depending on your evaporation rate. Boil for 75 minutes, adding hops according to the schedule. After the boil, do a whirlpool step: Stir for 5 minutes to create a vortex, add hops, and allow 20 minutes to settle. Chill to about 47°F (8°C), aerate thoroughly, and add plenty of healthy yeast. Ferment at 50°F (10°C), allowing the temperature to rise on Day 5 or 6 for a diacetyl rest. Once fermentation is complete and the beer is clear of diacetyl, crash to 32°F (0°C). Drop the yeast or rack into secondary and lager for at least 3 weeks. Filter and/or fine as desired before packaging. |
