Notes: Fermentation-pitch yeast (starter) at 48 F, ferment at 50 F, patience for a cold ferm will take time to start, Let it ride for about a week, raise the temperature to 60° F (16° C) for a two- to three-day diacetyl rest, and then drop it down to just a tick or two above freezing for at least 4 weeks of cold lagering. |

Notes: Start with RO water. Treat water to hit mash pH of 5.2 - 5.3. Use calcium chloride for added calcium in lieu of gypsum. (Gordon suggests 1 tsp for mash water)
After fermentation is complete raise temp to 60 degrees over several days to finish beer out and provide a diacytel rest. Then transfer to secondary purged of oxygen and lager for 4-6 weeks.
Original recipe called for White Labs WLP940 Mexican Lager yeast.
Starter: 2.5 liter with 8.5z of DME. Did starter 2 days prior to brew, put in fridge after fermentation was complete. On brew day poured off excess liquid and pitched. |
