brewing tonight. Consider dry hopping half the batch?
also got response from Kris at Stone. he suggests using something called "maltose negative yeast" which apparently has been used for NA beers. I'm not immediately seeing anywhere I can acquire this stuff. Possibly if I dont get any fermentation action I could consider adding some wine or champagne yeast.

update 11/11/19
copied recipe from the all grain version. this extract version should be able to cook up start to finish in an hour or less on the stove. hoping to see whether this is feasible or not. currently we are at 0.82% abv which is a little high, but we're really using minimal ingredients here. the thought is to give it some base malt to ferment but get most the flavor from a heavy crystal malt addition.
the OG is so super low. im buying a FG hydrometer so i can try to take accurate readings. im worried i wont be able to tell any change in gravity before/after fermentation.
it is possible that we could do this all grain and purposely mash in such a way that the wort is not so fermentable, that way we could use more malt (flavor) without contributing too much more alcohol. work in progress. there is also the boil off idea...

thought from talking to athletic rep at GABF. will just mash enough 2 row to get to 0.5%. then add crushed specialty malt to the pot as the wort heats up - shouldnt get any diastatic points from doing it this way (but we should be able to detect if it added any fermentables by the OG/FG). simple 30 minute boil with cascade hops should make a really low abv pale ale.
TODO : analyze appropriate BU/GU ratio, and IBU for pale ale. |

| Notes: Birch sap (eau de bouleau) was tapped from trees and used to brew this beer. The yeast used is not clean Champagne yeast but instead the reused lees from a honeywine brew which was fermented using the wild yeasts in the honey and added champagne yeast. The hops used were wild picked and stored in the freezer (-19C). |

Notes: BRU-1
If you want a beer that tastes like it came straight from a tropical paradise, BRU-1 is the obvious choice. Developed through open pollination at Brulotte Farms in Toppenish, Washingthon, this new hop varietal is absolutely bursting with the sweet, fruity aroma of pineapple. It works well on its own for single hop beers, providing plenty of alpha acids up front in the boil and contributing complex flavors of pineapple, pear, apple and fresh cut grass when used for whirlpool and dry hop additions. It also plays well with other hops to create a depth of fruit flavor and comes highly recommended for Pale Ales, IPAs, Hazys, IPLs, and wheat ales.

Amarillo
Amarillo® hops enjoy a special place of adoration in the hearts of brewers. Often described as a supercharged version of Cascade. Bursting with floral, tropical, and citrus (lemon, orange and grapefruit) characteristics, but it has a distinctive Orange character to it that is very different from Cascade. An excellent choice of super hoppy beer styles like Hazy IPA or West Coast IPA, Pale Ales, or Hoppy Lagers. But really, it's an excellent addition to any beer where you want citrus flavors to pop.

CTZ
Columbus, or CTZ (Columbus, Tomahawk, and Zeus), is a high alpha varietal with a neutral bitterness and intense aroma. A true dual-purpose hop that works very well for bittering, but shines just as easily as a late addition. CTZ hops have an earthy, spicy character that is great for bittering. But when used as an aroma addition, you'll find more floral and citrus notes come out that can be very pungent. Columbus is a perfect choice for IPAs, Pales, Imperial Ales, Hazys, Stouts, and Lagers.
