Notes: This will be my attempt to make a light extract lager.
1. Warm your water to 150-160 F. Steep your specality grains for 20 minutes. Remove the grains from the water after 20 minutes, taking special care not to squeeze the bag.
2. Start your boil. After 15 minutes, add 15 grams of Willamette hops.
3. At 50 minutes, briefly pause your boil and add your Pilsen DME. Resume your boil immediately.
4. After 55 minutes, add your corriander seed, Tangerine Peel, and 1/2 Whirlfloc tablet to the boil.
5. Stop the boil at 60 minutes and remove your spices and hops.
6. Using refrigerated water, bring your temperature down to pitching temperature for your yeast. Use an ice bath if necessary for your wort. You should have 5.5 gallons of total water in your fermentor.
7. Once fermentation has slowed after a few days, move to your secondary vessel and add 1.5 fl oz. of Isinglass liquid.
8. Bottle once fermentation has ceased.

Steep grains in 1.5 gal. of 155° F water for 30 minutes. Sparge w/ half gallon of 170 deg water. Drain steeping grains by pouring sparge water over grains, but don't squeeze. Add 1 gal of water and bring to boil. Turn off heat and add Light LME and stir well to dissolve malt. Turn on heat and bring to boil and start 60 min boil and hop schedule. Turn off heat and add LME extract.
Cool wort with chiller to 80 F. Add sterilized water to equal 5.5 gallons. Pitch yeast. |

8.3 gal of strike/mash water needed at 162 deg F.
Add grains in bag, stir and steep for 60 min.
Wrap kettle in towels and keep covered. Temp should stay consistent around 155 F. After mash, turn on burner, stir grains and get temp to 170 F. At 170 F, cut heat and let set for 15 min.
Remove grains and let drain into kettle.
Start 67 min boil and hop addition.
Stir a whirlpool and let stand 30 min.
Finish cooling wort with chiller to 80 F and pitch yeast.
