Notes: heated up filtered water - 3/4 qt for 3/4 lb grain. mashed for 60min, heating to 165 and trying to maintain 150. Check every 10-15 min with no heat and lid on. Had to add a little water here and there and add heat on occasion. Pre-heated 2.5 gal of water to 170 to use for sparging. Sparged to a separate pot with about 1 gal of water at 170. Poured wort in with 1.5 gal of 170 water and poured 1 gal of mixture over grains again. Composted grains and brought to a boil. Added 1.65oz Mosaic. After 15min, added 2oz Citra. After 15min, added 1oz Centennial. After 15 min, added 1 oz Amarillo. AFter 5 minutes, added 1 tsp Irish Moss. After 8 min, added 1 oz willamette. Off boil after 2 more min. Added 3 1/2 gal of near frozen bottled spring water. Wort chilled for about 20 minutes. Hot night so difficult to get down to temp. Pitched yeast at around 74 after added a small 4in ice bath and stirring crazily. Tested OG at 1.070. Could be the bottom of the fermentor was more full of crap, or that I got more from the grains....not sure. Could be more potent and hopefully the yeast can do their job.
Bubbles starting within 12 hours but were slow and deliberate. Little to no activity at 3 days. 4th day I tested the FG but got a ton of sludge. Read around 1.020. Added 4oz of Amarillo (dry hop). Taste was very bitter but considering that the sample was sludge, I wasn't surprised. I may pray a little more on this one. Leaving for Cali in a few days so will transfer it in another week and 3 days. Then we hope to get some sludge out.
Transferred after 9 days to the secondary. Loads of sludge. Loads. Didn't measure or taste.
IN the secondary for 1 week. Bottling was 39 bottles, 11 of which were 22oz. Due to the dry hop, there were just a few pices floating from the hops that clogged up my bottle filler and had to clear and re-sanitize 3 times during the process. Took 1 1/2 hours after I had racked my bottles to dry.
taste was good, bitter in the center of the mouth, no tongue, heat was more for this ABV (which made me think twice about my measurements).Not as much aroma as ithought for the dry hopping. Probably more to do with the 1oz at 2min. Next time more finishing AND dry hop.
I used 5.5oz of Corn Sugar which may be high. I think this will be a really good batch. |

Notes: This is a clone of a favorite (Fresh Squeezed).
Mash temp 148f-150f should result in a more complete conversion to simple sugars for fermentation so its not such a heavy IPA.
For Fresh Hopped flavor:
In the hop listing we add .15 Citra at 0 min flame out for aroma and flavor. Let it Hopstand (I used whirlpool for lack of option) for 10 mins to add the IBUs.
After fermentation (give it 2 weeks) dry hop with .20 Citra + .20 Mosaic for another 5 days.
Transfer to secondary and cold crash in the fridge for 2 days or more before priming and bottling.
Depending on your boil off speed you may need to add small amounts of water during boil to keep with in the 1 gallon final volume. Or top off in fermenter before aerating. |

Notes: This is hands down the best IPA I have ever tasted. The fragrence hits you in the face like a birthday cake! The first sip across the pallet brings out a smooth crisp semi-sweet light bodied ale followed by a delicous blend of grapefruit and passion fruit notes and then ends with a light kick in the teeth of bitterness. Perfectly ballenced. I have brewed this three times and the last two times were by request. Enjoy
The OG was slightly high coming in at 1.070 which is what I was counting on to drop the IBUs just a bit. First taste right on course for an amazing trilogy.
Wow. The Mosaic Hops add a new Element to this IPA. Delicous Grapefruit flavers with all the bitterness of big IPA. |

Notes: Steep grains in 4.5 cups water 40 minutes @152 degrees. "Sparge" in colander with 3.5 cups water @~168 degrees.
Add DME plus 8 cups water for hop boil. Add LME at around 2 minutes and bring entire wort back to boil before flame out.
Use 2 hop sacks. Boil additions go in first bag. Aroma/Flameout hops in second bag to leave in fermenter.
Ice bath to cool wort.
Add to fermenter on top of 1 gallon of cold water. Top up to 2.5 with cold water.
Pitch 5.5 grams of yeast at 65 if possible.
Ferment at 68-70 wort temp or lower if possible.
Iced during cold crash. Clearing? Added harvested yeast to priming bucket.
One week tasting shows great flavor, maybe slight oxidation. |

To be tasted from a ballon glass, th flavors were the best :
Medium blueberries presence upfront.
Low to medium brett taste and flavor late in the sip. .
Nice acidity, not as much as a gose/berliner but much more that a regular beer.

Notes: On brew day freeze 3 pounds of whole fresh cranberries and 3 navel oranges. 1 to 2 weeks prior to targeted bottling/kegging day, remove fruit from freezer and thaw. Zest and peel 3 oranges. Add 3 lbs cranberries, 3 orange zest, 2 orange centers, and a little water to a stock pot and heat on the stove to 160F and mash gently. Hold at 160 for 10 min, then cool to room temp. Place orange/cranberry mash into sanitized secondary fermenter then rack beer from primary on top and return secondary to fermentation chamber at 70F for 7 days. |
