Designed to contribute a biscuit flavor to beer. With its characteristic and bold sourdough flavor, it will contribute an exciting layer of flavor to Nut Brown Ales, Porters and other dark beer styles. Lends toasty, biscuity, tangy, and sour dough flavors to your beer. This malt is particularly suited to English Ales. The malt provides a deep golden to brown color. For nut brown ales, use 5-10% of total grist. For dark amber and other dark beers, use 2-5%. For porter, use 5-10%.
Victory is Briess’ biscuit style malt, lightly roasted to bring out the nutty, toasty, and biscuit flavors and aromas associated with baking bread. It’s an excellent malt for adding a layer of dry toasted complexity and a russet brown color to a wide range of beer styles. Use in small amounts to add a touch of warmth to light ales or lagers, or use in larger amounts (up top 25%) in darker beers to bring out more of the toasted biscuit flavors. 28°L
Black malt will give a sharp roasted flavor and deep red to black color. Used in porters, stouts, and dark ales and lagers. Midwest suggests using this malt in moderation.
Chocolate malt will give your beer a warm, nutty, chocolate-like flavor. Just a few ounces in a batch will impart a slight brown color. Use up to a pound in porters and stouts and dark lagers.
Caramel 60 is a widely used, versatile, medium crystal malt that will contribute a rich sweetness, and pleasant toasted bread and pronounced, full caramel flavor with a light reddish hue. Use 3-15% in numerous beer styles for enhanced body and foam stability as well as additional flavor and color. 60°L |

| Notes: Steep the grains for 20min at 150° in 1gl of water, sparge at 170° with 1/2 gl. Add enough water to make 1 1/2 gl. Bring to a boil, remove from heat and add the LME and first hop. Add the other hops as indicated quick cool, add enough cold water to bring to 5.5 gl strain into the primary pitch the yeast. Store for 12 days at 65-70°. Add primer to the bottling bucket dissolved in 2 cups boiling water, rack to bottling bucket then bottle. Wait ten days then enjoy super cold. |

Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gallon recipe, you will need extra because of the fluid loss during the boil process
1lb American Two Row
1lb Carahell
.5lb Cara Pils/Dextrine
3lbs Dry Malt Plain Amber Extract
3lbs Dry Malt Plain Light Extract
3oz Northern Brewer hops
2oz Simcoe hops
1oz Centennial Hops
1 Pack Nottingham Dry Ale Yeast
Procedure:
Start with 2.5 gal tap water, heat to 165 degrees and steep grains for 20 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 3lbs Dry Malt Plain Light Extract, 3lbs Dry Malt Plain Amber Extract and return wort to boil
Add 2oz Northern Brewer hops and boil for 60 minutes
Add 1oz Simcoe hops and boil for 45 minutes
Add 1oz Simcoe hops and boil for 30 minutes
Add 1oz Northern Brewer hops and boil for 10 minutes
Add bottled water to bring the specific gravity to 1.059 and cool work to 70 degrees
Add Nottingham Ale Yeast
Fermentation:
Primary – 2 weeks at 60-68 degrees
Secondary – 4 weeks at 60-68 degrees
Add 1oz Centennial hops to secondary fermenter 5 – 7 days before bottling day
Bottle beer 5 - 7 days after dry hop addition
Bottling:
6 weeks after brew date
Use .2oz of corn sugar per gallon of beer
Condition beer for 4 weeks at room temperature
