Notes: v.2: addition of Carafe produces a great colour, and an almost nutty taste (good).
Poor head retention but happy otherwise! Will do this again.
v.1 the original recipe called for Crystal 120, but this was unavailable, so subbed this is Crystal 80. Colour obviously lighter than desired.
Should have added a fining agent - 3 weeks in the bottle and it's still cloudy, but first bottle was good. I anticipate this will need at least another month to age. |

Mash water: 2 gallons RO, 0.5 gallon tap. 1.1g Gypsum, 1.1g CaCl2, and 0.2g Chalk.
Sparge water: 2.1 gallons RO
At least 24 hours prior to racking to secondary, warm up and lightly mash the peaches in a ziploc bag with Potassium Metabisulfite.
After primary fermentation is mostly complete (krausen has crashed), add peaches to secondary, then rack onto peaches, then add the Pectin Enzyme. Allow to ferment warm for 2-3 more weeks in secondary, then cold crash. Use fine mesh filter over racking cane into keg. Add Peach Extract to taste (1-2 ounces). |

Notes: Note to all - this is an attempt at a CASKED type ale. It might work as bottled beer, it might not. It is EXPERIMENTAL.
This is an English Strong Bitter (old style cask ale taste profile) a Golden Strong Bitter with a Cask Malt flavor. Originally made by Sam Smith Brewery, one of my favorite UK Breweries.
Mash in with all grains at 140 initially, raising the temperature while stirring to 151 to hold for 90 minutes. Batch sparge with an additional 12 quarts of water to collect 6 gallons of sweet wort.
Bring the wort to a boil and add the hops. (Yes, this is in the recipe, but I initially tried the calculator at 30 minutes and I had a more sedate 43 IBUs. Thought about splitting it at 45 minutes...but it does have raw brown sugar introduced 7 days before bottling or kegging - this should provide a kind of "casked" taste as the yeast should re-ferment. Yeah - this can be a disaster...wondering if I might make a tiny little batch and see what happens if I secondary it in a minikeg - no gas, pinch of yeast - like you would for a REAL cask. I think I would need a spunding valve to offgas the excess CO2.)
The recipe calls to add the molasses and sugar, dissolved in a little wort, added "during the boil". I wouldn't add it until 15 minutes prior to the end, so it has less of a chance to scorch and burn. At the same time, add the whirlfloc tablet and yeast nutrient.
The modifications so far.
Recipe was for 20 quarts - I needed 5.5 in the fermentor so I can guarantee 5 gallons in the keg. So I raised the fermentables to:
7 lbs of 2 row from 5 lbs
12 ozs of Torrified Barley from 8 oz
10 ozs of light crystal from 6 oz
Used Windsor instead of "Brewer's Yeast" - suited the final gravity
Messed around with the hop schedule - if you put them all in for 90 minutes, you get 60+ IBUs which is way out of character for a strong bitter - 50 IBUs is about tops. So I changed the Fuggles to 2 oz from 2.5 after I made the fuggles go in at 60 minutes and the Goldings at 30. That gets you to 48 IBUs. |

Flameout whirlpool 15 minutes
I mashed for 60 minutes, boiled for 90, allowed the wort to whirlpool for 15, and finally chilled the batch down to 64F. From there I hit the wort with a good 90 seconds of O2, pitched the yeast, and buttoned-up the fermenter fridge at 17.2C.
I ramped the temperature up as fermentation progressed until it hit 20C near the end. After 4 days I added the first dry hop addition directly to the primary. I sat on those hops for 3 days before racking to a clean, sanitized, keg to stand in as a secondary. The second dry hops were added, and the keg was kept at 20C for another 7 days before crashing the (secondary) keg, and racking to a clean serving keg. After a week of carbing this up, we were in business.

Session IPA é uma leitura mais leve da India Pale Ale, com ainda mais drinkability (menor corpo e teor alcoólico que o usual).
Cor: acobreada, pequena turbidez, média formação de espuma e retenção.
Aroma: bastante frutada, maracujá, manga madura
Sabor: lúpulado mas com amargor bastante macio. Discreta presença de malte
Recomendações:
- armazenar a garrafa em pé na geladeira
- consumir o quanto antes para aproveitar ao máximo os aromas do lúpulo
