Notes: Take .80-1.5 LBS of pils malt and Mash at 150-155 for 1 hour
cool mash to 122 degrees and add a handful of crushed malt.
Keep mash sealed and at 95-120 degrees for 2-4 days but KEEP at 95-120 degrees
No smells should be going on!
On brew day stir in half the sour mash into your normal mash then when mash is done add the other half.

Punk IPA. Amplified. In 2010 we finally got our paws on the equipment we needed to dry hop our beers. We focused all our energy on dry hopping, amping up the aroma and flavour of our flagship beer to create a relentless explosion of tropical fruits, and adding a hint of Caramalt to balance out the insane amount of hops. To get the best possible profile from the dry hops we recommend dry hopping post fermentation for 5 days. Dry hops should be added at cellar temperature. We find 14°C results in the most aromatic dry hop profile.

Notes: 2024-02-24 People really enjoyed this when I made it a few years ago. It had really good orange notes in the aroma and flavor. PacJade puts off orange, but I think the thyme plays off that note well. This time I don't have basic 2-row malt on hand due to last weeks' brew so I'm going to go 3/4 Crisp Floor MO and 1/4 Avangard Pils. I think full MO would be nice, but I want to thin that out a bit. Also, adding 5 g of ascorbic acid to mash for anti-oxidant support during later canning.
Simplifying some. Not doing a whirlopool, but adding 1.5 oz and 0.5 oz of HBlanc at flameout. I can cool quickly so we should get a lot of flavor off of it. Will add thyme at flameout too.
Weighed out 22 sprigs of thyme to be about 4 grams plucked leaves from the stems, tender tips added with stem. 15 (for dry thymeing) was about 2.75 g. |
