Notes: Bring 2.5 gal of water to 166 °F (74 °C) and mix in the malts and baking soda. The temperature should fall between 154–156 °F (68–69 °C). Hold mash for 60 minutes before sparging. Recirculate the wort until clear and then run off wort to the kettle. Once the top of the grain bed is covered by an inch of wort, begin sparging with 176 °F (80 °C) water. Collect 6 gallons (23 L) of wort. Bring wort to a boil, add hops and boil for 60 minutes. Add Irish moss 5 minutes before the end of boil. Cool wort to 70 °F (21 °C), aerate, pitch yeast and ferment at 70 °F (21 °C). Rack after 10 days and a second time in another 14 days. Then prime, bottle and hold 7 days before drinking.
This is the classic stout to serve on mixed gas using a stout faucet. If this method is desired, skip the priming and bottling step and use the technique detailed on page 33.

Notes: Mash at 154F for 1 hour. For more flavor, add the whole ounce of hops to the kettle as you sparge the mash, so the hops soak the time it takes to come up to a boil and the whole boil of 60min, this is the first wort hop. Otherwise boil for 5 mins, add hops and boil for another 60.
Don't cheat on aeration.
Pitch and set the fermentation at 58F for 7 days, raise to 65F for another week and then move to a sealed keg and leave on basement floor ideally for 2-3 weeks at 48F.
After that chill and check on carbonation level. |

Notes: Stuck sparge and mash out; multiple times. Use rice hulls next time with so much wheat and oats. Plus the grist was finer than usual.
Stuck/plugged trub screen when cooling in. Prob extra 15 min or so of whirlpool time. Had to remove trub screen all together to get flow. Had tons of solids carryover into the fermenter, likely both grain bits and hops/trub. Bummer.
Had to blow back while trying to dislodge trub screen. Hopefully it didn't affect micro.
Still having crappy BH efficiency. Have to figure out a better way to optimize BH conversions. |
